Won Tons (great recipe)

I love to cook with Won Tons. Over at the Prairie Homemaker, a lovely lady posted a recipe for these Won Ton Chicken cups--of course I had to try it:) I did tweak the recipe a bit, instead of chicken I used left over pork. I also did not use quite as much salsa, maybe a third of what was called for. They came out so good, and they went fast.


Wonton Chicken Cups ( Mexican Taco style)
36 wonton wrappers
1 pound chicken breasts ( boneless , skinless) cut them into 1 inch pieces
1 onion chopped
taco seasoning one envelope
1 jar 16 ounces salsa divided
2 cups shredded Mexican blend cheese divided
chopped green onion, sour cream, chopped ripe olives, chopped tomatoes and shredded lettuce ( optional)
Sprinkle chicken with taco seasoning. In cast iron skillet or skillet with olive oil, cook and stir chicken over medium heat for 5 minutes until chicken juices run clear. Chop chicken with food processor or by hand until chopped. In a medium bowl combine chicken,onion, half the salsa and 1 cup cheese. Press wonton wrappers into miniature muffin cups coated with nonstick spray or we use olive oil in a pump. Bake at 375 for 5 minutes or until lightly brown. Spoon rounded tablespoons of chicken mixture into cups, top with remaining salsa and cheese. Bake 15 minutes longer or until heated through. Serve warm. We garnish with green onions , sometimes sour cream, shredded lettuce etc. This will make you about 3 dozen and will freeze good.

That looks pretty yummy. I haven't used won tons in a long time. When I was a kid, my mom would bake them with seasoning salt for low fat chips.

Hi Lindsey---that is an interesting idea to make chips out of the won ton's. I bet with a really good dip, they would be wonderful--ohh, you could shape them into little scoops too..LOL:)
