* CARPETS*


HAPPY TUESDAY!!!
I hope this morning is treating you well.  I posted my MENU PLAN in the post below, so take a peak.
I am going to do my Peloton and then I am going to clean some carpets.
I have a shag rug that I want to clean and then put out in the hot sun to dry.  It is going to be hot today so I am going to take advantage of that!!

I will also be making my Ranch dressing.


Ranch Dressing Recipe:


Ranch Dressing:
1 1/2 C Mayonnaise
1/2 C Buttermilk
1 T Red Wine Vinegar
1 T Sugar
1 tsp Garlic powder
1 tsp Onion powder
1 T Dried Parsley
1/2 tsp Dill
1/2 tsp Salt (optional)
1/2 tsp Black pepper
Dash of Paprika
Whisk ingredients together, and refrigerate one hour before serving:)

I went to the grocery store today and it seems people have calmed down on buying all the toilet paper.  Thank goodness!!

I bought some lavender today, they smell glorious.
They will go on my porch.

Gas with my Kroger points is crazy...it was .67 cents a gallon this week!!!

Twice Baked Potato RECIPE!!!

These potatoes are an absolute favorite in our home.
I have been making these forever.
They are super easy!

Wash your potatoes off ( as many as you want, a potato a person is a good estimate) either with a potato scrubber or your hands.
Poke some holes in them with a fork...you can always google how to poke a potato ;)
Put your potatoes in the oven at 375 for 1 hour

After they finish baking, let them sit for a little while until they cool off enough to handle.
Cut each potato in half and scoop out the potato, careful not to ruin the skin.  You are going to place the filling back in the skin.  Mash the potatoes in a bowl, either with a fork or a immersion blender....add  a few dollops of butter, sour cream,  a few splashes of milk, and a good amount of cheese..a big handful...adjust to your liking and how many potatoes are being used.
Mix all together.....make it creamy like mashed potatoes and add back into the skins., sprinkle some more shredded cheese on top..put them in a baking dish and put back in the oven (375) for about 30 minutes.
Serve the twice baked potatoes with a dollop of sour cream on each, a few bacon bits, chopped green onion, salt and pepper and even more cheese ;)  Have fun with it and enjoy......

Part of Sunday’s Dinner ♥️



Marinaded Tofu over white rice....YUMMY!!!!!




This is the marinade I put on the Tofu.....

16 ounces extra-firm tofu
4 tablespoons soy sauce
3 tablespoons rice vinegar
1 tablespoon pure maple syrup
1 teaspoon sesame oil
2 garlic cloves, minced
1 tablespoon fresh grated ginger, or 1/2 teaspoon dried ginger
2-3 tablespoons veggie oil to coat the frying pan :)

Easter Cake...or anytime cake......If it makes you happy. bake a cake



A favorite cake in this home, is STRAWBERRY.
So for Easter I made a strawberry cake with vanilla frosting :)
It came out really nice and I was quite happy with it.
I have never been a fan of baking but I think as I do it more and more, I am really learning to love it :)
Now, I have to come up for a cake for my sweet boy...he will be turning 13 this month
13, can you believe it????




I used coconut and put it in a baggie and added green food coloring to make it green.  I made a little nest in the center of the cake and added little candy robin eggs.


I then had some pretty star sprinkles in pastel colors, 
and sprinkled them over the cake.


.......and of course, I used the star tip to make the little flower designs......

Sweet Potato Balls..stuffed with CHEESE!!!!!



I made these sweet potato balls with leftover sweet potatoes. I don’t make my sweet potatoes “sweet”. I make them savory ... in the center of these little balls is cheese.... CHEDDAR CHEESE...lol. You can fry them, but I baked them ♥️.
I made balls, stuffing cheese in the center, dipping in egg, bread crumbs/flour mix, then egg and bread crumbs/flour mix again. I double dipped them. I baked them for 30 minutes at 375°... turning them every so often, ever so gently. I made this recipe up.... ♥️

*I also, sprayed the foil on the pan with nonstick spray*

A Little Bit Of Easter ... 🐣....and a breakfast casserole.......


Happy Monday!!
I hope everyone had a safe and healthy Easter.
My day started out with waking up early and running my 5K before the storms came rolling in...in rained after my run on and off all day and then in the middle of the night the dangerous came in....I slept through it....

Then after I got home, I showered and got dressed...I make it a priority to shower and get dressed with makeup and hair brushed every single day..I crave normalcy and routine and I want my kids and husband to see a pretty mom, if you have read my blog for any long period of time, you know that about me......LOl..but,I applaud you for your own style....I just like what I like...no judgment here..

I cooked and I cooked and I cooked...I made a full spread for Easter dinner, which I will share with you in another post.....I hope you come back :) 

Here are a few of my Easter pretties....I love pink so much....I painted a spaghetti sauce jar pink.....

Here is my precious Gnome...before the quarantine started, I had bought the supplies to start making these cute gnomes...so, I am excited to start that....I bought my supplies from Hobby Lobby
Look at these cuties....my little Easter family....


Ohhhhh, these bunnies make me smile....
I also put that little basket together, with the carrots from Hobby Lobby and eggs...
So happy

EASY BREAKFAST CASSEROLE
1 lb. sausage, bacon or ham
3/4 c. sharp cheddar cheese
1/2 c. mushrooms & pieces
5 eggs
1 3/4 c. milk
6-8 slices of bread (cubed)

Place cubed bread in casserole dish, put cooked sausage, bacon or ham on top. Add sharp cheese, mushrooms on top of meat.
Beat eggs, milk, salt and pepper, pour over top.

Let stand 5 minutes then bake at 350 until brown (35 minutes).
