Friday....already, LOL

WoW..It it was a busy unexpected day...LOL.

I had to run to the grocery store for some milk, and ended up picking up a few things here and there..little did I know the plans of my husband. He got home early and wanted to go to Costco..so off we went. I have been busily trying to get everything put away. I really need to re-organize my pantry tomorrow..it really is out of control....BUT, I mean out of control in a happy way. I thank God every day for our blessings and that I am able to feed my children such healthy foods.

Dinner was not what had been planed, we got Costco pizza instead..what a huge pizza for only $8.00

The New year is almost upon us, and as I was reflecting on this past year, it was a very good year in general, but there sure were a few bumps. Little Kevin being in the hospital, then Tony having to be in the hospital, those were really hard times for me, but we made it through, and I made it through with the Grace of God, and I lay in bed at night and thank him for all my many blessings.

One of my favorite sayings to live by is, If tomorrow you woke up with only the things you thanked God for, what would you have? Makes you think, huh?

Well, I hope everyone has a wonderful Friday night, and stay warm, it is quite chilly tonight. Also, please forgive my run on sentences...LOL. The words just flew from my fingers...LOL.

Thursday:)

Hello!

Today is Thursday and it is a day I don't have any where to go. I can stay home and do things I enjoy:)

My daughter is on a playdate with her cousin, they are the same age, which is so nice, automatic best friend for life...LOL. They had a sleepover here last night, so now they are over at my sister's home.

It is just me and Little Kevin until Big Kevin gets home.

It is like a summer day outside, in the 70's. Sundress kind of day:) At about 4:00 it starts to get cold, it can drop down to the low 30's.

My dinner menu for the week is going well, I am thinking of making the tacos tonight. A favorite here. We shall see:)

I dusted my room today. Where does all this dust come from. Also, do you get those webs up high on the ceiling. I feel like I am constantly getting rid of the them. There is one corner in my living room, that has a vaulted ceiling that is near impossible to get at..and it has so many of those webs..I get a wet wash cloth and make a ball and throw it up to get them...LOL.

How many cups of coffee do you drink in a day?
I tend to drink coffee through out the day.

Turkey Enchiladas





Ingredients
2 cups shredded Cheddar and Monterey cheese blend
1 onion, chopped
1 (2 ounce) can sliced black olives
24 (6 inch) corn tortillas
1 (19 ounce) can red enchilada sauce
4 cups cooked turkey, chopped


Directions
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
In a small bowl, combine the cheese, onion, and black olives.
In a small skillet, heat enough oil to lightly coat one tortilla, and cook until soft. Remove and dip in enchilada sauce to coat.
Add turkey and cheese mixture to center of tortilla, roll and place in the prepared dish. Repeat until bottom layer of pan is covered with enchiladas. Spread enough sauce over bottom layer to cover.
Repeat process with a second layer; spread remaining sauce on top and sprinkle with remaining cheese mixture. Bake 20 minutes in the preheated oven, or until cheese is melted.

Menu Plan Monday:)

My menu plan for the week will include a lot of Turkey, since that is what we had for Christmas dinner:)

Monday: Prime Rib Roast, Loaded Baked Potatoes, Steamed Asparagus, Fresh Green Salad, Homemade Dinner Rolls.

Tuesday: Turkey Casserole, Steamed Veggie, Salad, Rolls.

Wednesday: Turkey Enchiladas, Salad

Thursday: Turkey and Dumplings...Salad

Friday: Tacos

Saturday: Blackened Tilapia, Steamed Veggie, Rice, Salad

Sunday: Pork Roast, with all the fixings:) Potatoes, carrots, salad, rolls.


.....Also, if I have enough Prime Rib Roast left over tonight, I will work that into the menu, not to waste it:)

......Also, my menu may change if I use up all the turkey in one meal, before I can make another...LOL.

Tonight for dinner I made Hamburgers, Au Gratin potatoes, Peas and a Salad:)

My turkey is in the fridge defrosting for Christmas day dinner.
We did some shopping today and Alexis picked out Jesus's birthday cake. She wants to make Chocolate on Chocolate with Chocolate sprinkles:) That is a lot of chocolate...LOL.

Christmas Plates!




I brought out my Christmas plates this week. I think they are just so pretty!

Today is Wednesday, and it is a beautiful COLD day. Alexis had her last ballet class yesterday until after the Holidays. So she has about a month off.

Last night's dinner was pigs in a blanket. I can not remember the last time I made those. Kevin was not home for dinner, so I thought I would make something fun. I made steamed carrots for a healthy side to go with...LOL.

Tonight's dinner is going to be boneless, skinless chicken thighs.

Some of you are interested in the breakfasts I make, so yesterday morning I made bagels with cream cheese, turkey bacon and fresh fruit.
This morning's breakfast was french toast and fruit on the side.
Real bacon is made on weekends, My husband's favorite breakfast side.

...and yes, they do enjoy a bowl of cereal once in awhile, I have fun cereals and healthy cereals:)

I go to Costco and buy lots of fruit and veggies. Not only do my children eat a lot of fruit and veggies, I also juice too. So I need a lot. PLUS, my Guinea girls EAT a lot of veggies..:). There favorite thing to eat is wheat grass, they go crazy for it. I like to put it in my juicer, but I can't keep up with it...LOL.

I am sure you are all busy getting ready for Christmas, as I am:) I adore this time of year so much. It always seems to go by so fast.

Rainy Monday!

Good Morning!!!

It is a cold and rainy day here in San Clemente, California! San Clemente, is in between Los Angeles and San Diego. It is a little beach town, but boy is it cold today:) I love the cold and rainy days we get.

We had a wonderful weekend. Hope you all did too.

Christmas is just around the corner, can you believe it? Are you ready?

I will be doing housework today and staying INSIDE. I will enjoy watching the rain though, through the windows.

It is an Ugg Boot day. I love my Ugg Boots! They keep you so warm. I think Ugg boots may be a California thing, I didn't see any in Georgia when I lived there.

Last night for dinner, we had Tacos.
Tonight's Dinner, will be Sausage, Steamed Broccoli, Rice and a Salad.

Happy Saturday!




This morning at about 9:00 I went to the Walmart and did some Christmas shopping for Little Kevin all by myself:) I got there early enough that it wasn't crazy busy. I picked out his new jammies, they are cars. I picked out a few toys he said he would like. I was happy with my purchases, I love the excitement in there eyes on Christmas morning.

I rarely ever go anywhere with out a child or my husband with me, so it was weird being all by myself..the checker asked me if I enjoyed shopping with out the children and I said with a big smile, NO!!!!...LOL.

So, we are supposed to have a big storm move in on Sunday evening and last until Tuesday, exciting, I love the rain. It is quite beautiful outside today, you would not know that it is December, more like a spring day.

I can't be too specific about the gifts on my blog or Facebook, because my daughter can read either at any time..so I have to keep some things secret:)

If you friend me on Facebook, from here, please let me know you are from my blog. Some people will ask to be my friend, and I get a little embarrassed because sometimes, I have no clue as to how I know them:(

For the rest of the day, I will continue with some housework, laundry and I aso want to make my Christmas cookies (sometime before Christmas..LOL)

Also, we always make Jesus a birthday cake. My daughter will most likely pick out what kind of cake this year and help me make it. It is very important that my children know the true meaning of Christmas. It is not all about the gifts. It is Jesus's Birthday.

I was saddened to hear about Michelle Duggars miscarriage. It is truly heart breaking. It is also NOT for us to tell them how many children they should and shouldn't have. That is between them and God, AMEN!!!
