How To Freeze Corn

I caught a few minutes of the Martha Stewart Show today. She is on the hallmark Channel and she comes on a few times during the day here. When I can, I try and catch her. The topic I saw today she was explaining how to freeze Corn and Tomatoes:) When corn goes on sale I am going to freeze it like she said:) I never knew you could freeze tomatoes the way she did it. She just froze the whole tomato, all she did was core it. She said when you want a tomato, take it out of the freezer and let it sit for a bout 45 minutes. The skin peels right off and then you can grate it. She made spaghetti squash topped with ricotta cheese and then she made a tomato sauce with the frozen tomatoes and some onion. It looked really good.

Now, the corn, you have to blanch it before freezing.

I found a whole bunch of How to videos on you tube. It is something so simple to do, but so useful!

Target or Walmart:)




Happy Tuesday!
October 9th, Target will be opening in our town. It will be just one plaza over from Walmart.
You can see them both from the top of my hill.
I love both stores and am super excited to have them both so close. Walmart by far is cheaper, BUT, Target does have some things too in their own right. I really like the clothes there.

I was talking with a lady that works at Walmart and she said that Walmart matches any price, so if you find something cheaper at Target, they will match that price...BUT, to me , the things I like at Target, they don't have at Walmart, but that is a neat policy Walmart has. I have also heard that Target is going to be a supercenter, I can't confirm that yet, but that would be really neat. The Walmart Super center we went to about a week or two ago is in Oceanside, so it would be really awesome to have a Super Center so close.

It is a beautiful day today, it has been really nice fallish weather. Today though, they say it is suppossed to warm up.

My Father's birthday is Wednesday, so this weekend my sister and I are throwing him a birthday party on Saturday. His favorite meal is a turkey dinner, so that is what my sister told him we would make. After we got off the phone, I said to her, are you sure you are going to find a turkey right now..LOL. Well, I found some at Albertson's, Foster Farm Fresh Turkey, so if my sister can't find a Butterball, that is what we will get.

My grandmother will come down too. She now stays with my father since she can not hear or see too well.

Tonight's Dinner:
Baked chicken breasts
Roasted veggies
Salad

Thursday!

Today feels like a beautiful Fall Day:)

I have been working really hard in the garage, going through box by box and organizing everything. I am going to get this garage organized!!!


I have also been busy decorating for fall, and cooking and baking. I am going to enjoy every single day. Every day is a gift:) I have pumpkins of all sizes...LOL. We went to Super Walmart, and it was just like the one in Georgia. I told Kevin if we close our eyes we could almost pretend we were in Georgia.

Bees!





After I picked Alexis up from school on Thursday. We were standing in the kitchen and Alexis says, MOM!!! Look at all the bees outside. I looked outside and there were what looked like to be thousands of bees swarming all around my house. I ran upstairs and made sure all the windows were shut. Then I looked out the window in disbelief. It was a scene out of a scary movie!! I could see the bees were only around my home, not my neighbors through my upstairs window. I called the police, not 911, but the local number and told them I had bees banging up against my windows and it was really discerning. They weren't passing through, they weren't leaving. I started to feel frantic inside. I was staying calm in front of my children but inside I was nervous. The bees were not going away. The police gave me a number to call, that didn't work out. So I called my husband, and I started to cry. The bees banging on my window were really getting to me.

I called a company called Bee Buster's and they came right out. If you click on the picture above, and enlarge it, you can see the bees between the bushes. By the time Bee Buster got to my house, the bees had settled down, but were not leaving. The Man said that through his experience, the reason why the bees won't leave is usually the queen is injured and landed in my yard and all the worker bees will not leave her side. Just my luck, Mama Bee decided to plant herself in my yard! He used a shopvac and vacuumed them up and then used a spray to get the rest. I was sorry they had to be destroyed, but they assured me the africanized bees have mixed in with the honey bees and no bee swarm was safe anymore.

Then on the front front page of our local newspaper, 4 people had been hospitalized that day in Santa Ana from bee swarms, scary stuff!!

It cost $150.00 to get rid of them.

Thursday:)

Hello!




Today is Thursday, that means it is almost the weekend~~~YaY!!

The actual Fall season starts in a little less then a week. I start a little earlier in celebrating fall and savor every minute of it. I am hoping when I go to the grocery store, the holiday creamers are out.

Oh, and guess what, I found out we have a Walmart Super Center in California..I am so beyond excited to go there. It is in Oceanside, and my Google map says it is 17 minutes away...I am definitely going to go check it out this weekend:)

We are working on getting our garage organized, slowly but surely it is coming along. The garage just seems to be a catch all room.
Hopefully soon it will be done and I won't be horrified when Kevin opens the garage door..LOL.

Yesterday after school, I took Alexis to her Ballet class. I really like the teacher and Alexis is really enjoying the class. We changed dance schools and I really am glad we did, this is such a wonderful school:)

Last night for dinner we had roasted chicken and all sorts of roasted veggies. Asparagus, peppers and petite green beans. We also had a salad.

Tonight I am making a hamburger casserole.

The sun has not come out yet, it is cloudy and looks so Fallish. It isn't cold though, it is in the low 70's.

I have hung up my fall leaves around the house. I have smelly candles, pumpkin, apple and cinnamon and of course my old faithful vanilla.

We bought Little Kevin a new bed, it is a trundle bed. It is really nice. Kevin and I can't decide on the theme of his "New" big boy room...Baseball or Star Wars??

I have bananas that are turning, so I am thinking of making banana muffins today. Muffins seem to go faster then a loaf.


Okay, I heard on the news about the Missoni at Target, and how it all sold out in about an hour and their website crashed...so of course I had to see what it was..UM, I don't know? Maybe it will grow on me, but right now, I can't understand the big fuss...LOL....

Tuesday!

We made a Costco trip this weekend and I bought a pumpkin pie. Oh, it is a really good pie, and when you taste it, it reminds me of the Holidays.






Last night for dinner we had tacos, and the night before we had Blackened Tilapia, which is SOOOOOOOOOOOOOOOOOOOOOOOOOOO good:)

It thunder stormed on Saturday which was so awesome. I love, love, love rainy days.

I am sure a lot of you heard about the power outage here in Southern California. It affected all of San Diego, parts of Orange County, parts of Mexico and parts of Arizona. It was about 3;40 in the afternoon and I was prepping dinner. Kevin was home early from work and we were chatting in the kitchen. All of a sudden, Boom, everything went off, it was silent. We walked outside to see if it was just us or the neighborhood. a few more neighbors were out wondering the same thing. I got my radio and put batteries in it, and we were slowly discovering just how big of a power outage it was.

I had lots of candles on hand and a flashlight so we were okay. When the power went out so did the A/C, so when the home started to warm up, I opened up all the windows. Little Kevin was not affected at all..LOL. he just continued to play with his toys. I just puttered around the home until it got too dark for me to see. I ended up listening to talk radio until I fell asleep. I was laying in bed at about 2:30 A.M., when I heard the computers come on. I was happy. School was closed Friday, so we had a nice day off:)

Comments!

I really do not like the way I have my comment section set up. I always left my comment section open to anyone that wanted to comment. BUT, the spam I am getting is just out of control. Does the word modification stop spam comments from going through? My comment section is set up to where I have to approve them, and I really don't like that. I want the comments to be able to come right through:) I just can't stand some of the content of the spam comments, I am sure you all know what content I am talking about. Why my blog brings those kind of comments, I don't know:( What do you all do or suggest?
