My Post!
I love my family--I adore my husband and children. I love cleaning my home, I love cooking for my family--breakfast, lunch, dinner--snacks---I love knowing how much they want to eat my cooking. I love getting my daughter's clothes ready for the next day, knowing that her pink dress must be pressed. My husband's clean clothes all ready to go and how he depends on me for these things--my husband depends on me to take care of our home, our children--him!!! He knows that when he is at work working hard, I am at home working just as hard too. I would never want to do a man's work---I love being a girl--I love wearing pretty dresses, pretty perfume--having babies--and being caretaker of my family. My husband may not buy me flowers everyday----or jewels---but, he will stop at the store after work and bring me home my creamer when he noticed it was low that morning---he will clear the dinner table off for me when I am upstairs feeding the baby, he will call me just to tell me he loves me---in the morning he will kiss me gently on the cheek not to wake me, but just to do it before he leaves for work.
You see, there is nothing more in this lifetime that God has given me that I would rather be doing then what I am doing right now. I was at the grocery store on Friday, and I had all three of my children with me, Little Kevin was in his little seat in the cart--Alexis was holding on to the side, and Tony was standing next to me---I thought at that very moment--I am HAPPY!!!! This IS happiness---the sweet faces of my children---Oh, how I love them. My husband, my dear sweet husband--works so hard---I can see the pain in his face when he can't give us everything---I can see the little worry lines on his forehead at times, and I know he is thinking of things that he is worried about and doesn't want to worry me with them---I hug him and ask him if I still hypnotize him with my beauty---and I giggle and he kisses me and says YES, I still hypnotize him---even though I can be mean at times---I have terrible OCD, and if things just don't go thus way--I become so frantic and frazzled, but Kevin loves me for all my imperfections---even when I am yelling on the top of my lungs---what the DOG DID...LOL.
This is happiness, this is MY happiness--and I thank God everyday for what I so don't deserve but cherish with all my heart!!! xoxoxo

I am not sure what dinner is going to be--we had London Broil last night on the grill, and I made homemade french fries--I cut them really thin and they came out so good.

Veggies and Other Fun Stuff
Here is the box of mashed potatoes I got from Costco-->
...and I bought hummus----it is a favorite in this house--I actually used to buy it for me, but my kids caught on, and love it--it was on sale at the Farmer's Market for 2 dollars a container. Have any of you ever made your own, I keep meaning to try it, but I keep forgetting to add chick peas to my list..LOL--oops.

Here is the Eggplant Recipe-->
*I tweaked the recipe a bit--I used Prego spaghetti sauce, and I bought freshly grated Parmesan at the store. I left the whole recipe as is, just in case some of you are interested in the spaghetti sauce recipe and such.
Ingredients
1 Decent Sized Eggplant
3 Eggs
1/3 Cup of Milk
½ + Cup Flour
Salt
Pepper
Olive Oil
½ # Parmesean Reggiano
½ Box Penne Pasta
Easy Spaghetti Sauce
Directions:
Pre-heat your oven to 350°.
Peel your eggplant, and cut into roughly quarter-inch slices. Lay these out on paper towels and sprinkle salt over the top of them. This is to get some of the bitterness and water out of them. You'll want to let these sit for around a half hour, at the end of which dab them with a paper towel to remove the liquid and excess salt.
In a bowl, mix your eggs and milk with a fork, like you were going to make scrambled eggs. Put your flour and salt and pepper on a plate, and mix together with your fingers - this is for dredging the eggplant. You may need more flour, but you can add that to the plate later.
Pour 2 - 3 tablespoons of olive oil into a sauté pan, and set your heat to medium to medium-high. Now take your slices of eggplant, and, one by one, dredge in the flour, tap the excess flour off, dip into the egg mixture, then dredge back through the flour. Once you've done this, put the slice into the pan with the oil, and cook for approximately 2 or 3 minutes a side, carefully flipping with a pair of tongs or a fork, until the batter becomes a nice golden brown and is crispy. Typically I only do 4 or 5 slices at a time, and hold off on dredging the eggplant until I'm ready to put them into the pan. And it really helps to have someone in the kitchen to help you with the dredging and egg, so that your fingers don't become entirely gunked up with egg and flour.
As the eggplant slices are done, remove them from the pan and place them on a cooling rack. This isn't so much to cool them as it is to prevent them from getting mushy as they cool, so that the batter stays nice and crisp.
Once you've cooked all your eggplant, using a cheese grater (or a small knife), grate off large rustic slices of your parmesean reggiano into a bowl or onto a plate.
Now take and randomly layer your eggplant into a pan - some kind of Pyrex, or a brownie pan, or the like will do just fine. As you put down a layer, sprinkle some of your cheese over each layer. But be sure to save out a little bit of the cheese for garnishing the plate!
Pop the pan into the oven for approximately 30 minutes.
If you're making the Easy Spaghetti Sauce, this would be a great time to start it.
After the eggplant's been in the oven for about 10 minutes, start your water for the pasta.
When there's about 10 minutes left to the half hour for the eggplant, you have two choices - either drop everything into a holding pattern so you can open another bottle of wine, or carry on. If you're dropping into a holding pattern, you'll want to drop the oven temperature to about 200° when the half hour is up. You can keep the eggplant good and hot but not overcooked like this for up to about a half hour. If you're not, throw in your pasta so as to have everything come together at the same time.
When it's time to serve, take some of your sauce and toss with the pasta, and put on the plate. Then place a few pieces of eggplant over this, and ladel a little more of the sauce over the top. Sprinkle some of the leftover cheese over the top, and serve.

Spray Wash, Floors, Tomatoes--Happy Tuesday!
I went to the store looking for this product I saw on TV --it was Shout Advanced and it got stains out that were all ready set in--I couldn't find that product, so I bought this--ohhh boy, does this work good---my new favorite product right now---and it smells delightful:)
I got the bucket out and filled it with soap and water and some bleach and washed all my floors in my home----don't get me wrong, I use my swiffer all the time--but a good scrubbing is what my floors needed:) I didn't do it on my hands knees though, I cheated a little and used my cotton head mop:) The floors look nice and my house smells clean--and all the rugs are ready to be put back down when they finish up in the dryer..I washed all bathroom rugs today too.
...Aren't these just gorgeous!!!! They are big too---The grocery store were having a nice sale on Tomatoes--and when my Dear Hubby was at the store, he brought these home---they are going to be so good in my salad.
Oh, the picture below of me in my apron--I had to giggle at my mirror, boy, did that need to be cleaned(don't look)---OOPS...LOL--oh well, such as life:) Have a great Tuesday--it is nice and cool out----so it is always nice to do housework.

Happy Monday!
I had to clean the bird cage this morning and vacuum the feathers under neath---the girl bird, knocked over her food dish--and made a mess, she does that--the yellow bird, Sunshine, is so sweet, and the blue bird has quite an attitude...LOL.
Looky here--I got pumpkin pie incense--isn't that such a pretty little jar:)
I also made another stop at Grandmas (pictures below)---Alexis doesn't get to see her as much because of school, so I make special stops over the weekend too, so we can all visit:)
Alexis and Tony are both complaining of a sore throat and tummy ache--Alexis is laying on the couch, and Tony said he had to go school----I told Tony to call me any time, and I would zip right down to get him--the school is right down the hill--it takes me 2 minutes to get there--but when everyone goes for drop off and pick up--it takes up to thirty minutes----oh well:)

Coffee and a Post
This morning after I dropped all the kids off at school--I hopped on the freeway and went to my Grandmother's---just in time for some fresh brewed coffee. We had a wonderful morning--she always tells me story's about Grandpa and when I was little and such. She calls Little Kevin, *Bobby's Boy*--I am not sure if you remember, we all refer to her as Bobby because she wears Bobby pins in her hair. I spent the weekend doing every stitch of laundry so I took the morning off today to visit my favorite person. That doesn't mean that NOW I don't have more laundry...LOL..because I do. Last night one of my dearest friends called me, and I had to tell her I had to call her back---Kevin had gotten home late and I had to fix his plate and clean the kitchen---then Little Kevin awoke and I nursed him and then fell asleep myself--so I woke thinking---OH NO--my friend--so I have to call her in a little bit and apologize for not calling her back--I know she had a lot to talk about, because lots of changes has gone on in her life.
Chicken is in the oven baking--a great sale on chicken bre*asts-----yay!!! We also have mashed potatoes, corn, spinach and a fresh green salad. I am cooking all the chicken, so tomorrow I can use the rest in either a casserole, noodles or dumplings---not sure yet. Tomorrow I am definitely staying home and doing some housework and such--plus getting my list ready for a great big grocery trip:) Ohh, I forgot on Friday, Bobby needs to go to a Doctor appointment, so I will be gone some on Friday.
I am charging my camera up--it was low, so I am going to take some updated pictures of Kevin, he is growing so much--and what a sweet personality he has, just like his Daddy!!!! I have been tivoing Martha, so maybe one day this week I will be able to see what great ideas she has. Also, the Duggars new episode is going to be September 21st--I am pretty sure, but I am going to double check just to make sure.
Well, what else.....I am setting up my home in *Fall Motif* I will take pictures and share my fall decorating/cooking/baking etc.

5 Minutes
I also made a mini notebook to keep in my car. I can't lug my big Home notebook around, and I just love pink. I printed out a calendar and added it and notebook paper for jotting down notes--now I can keep track of times and dates in my car--and look over them as I am waiting at one pickup point--including my grandmother's appointments too--and yes I do also have a mini book in my purse too--you never know when you may need to jot something down, or look something up--well at least I do..:)
Plus, I just love stationary, folders and pretty pens.
How many club cards do you have? I have a few small keychain cards and then I have bigger ones in my wallet for other stores, like VONS....I just thought I would take a picture and share this with you...
ohhhh, and this is something I just have to have on my key chain. I wear my key chain on my wrist--especially when I am holding my daughter's hands and holding the baby--oh it helps me not lose my keys. After I use them though and they are no longer needed, I do put them in my purse--but from the house to the car or the store to the car it is a life saver for me.
I am so happy today is Friday--what are your plans for the weekend? I have a big date with the washing machine--I am also going to go visit my Grandmother on Saturday for awhile. My grandmother is 88 and I want to spend as much time with her as I can. I want my children to *KNOW* her!!!!
I cleaned toilets today, and I also wiped down the children's bathroom sink area. I also brought out a few more fall decorations--I just love fall---
