Happy Thursday!!!
Good Morning!! It is a wet morning here in Georgia. As much as I love the rain, I hope it does not rain on Sunday, that is the day we get the moving truck--so we shall see. Just think this time next week, I will be in my new home in California, I still can not believe it--it is so surreal to me. I never thought, that I would be going back. It is amazing how things can change in a blink of an eye. I know my Grandma will be happy I am there, I will be able to take her shopping to all the store she wants to go too. We always had a nice time doing that, and she loved to go to Costco and try all the samples..LOL. I am also wondering what things we will see as we drive across country. It was always very interesting to drive through the states. I loved staying overnight in the little towns, and eating at the Mom and Pop diners. I am going to make sure I have my camera with me, so I can take pictures of my adventure.
I have completely packed up my daughter's room, and I have also packed up my room. I really need to start on my son's room---his should not be too hard, he is 14 so he doesn't have many toys anymore.
Also, I already started my kitchen, the things that I can do with out for awhile. You do not realize how much stuff you really have until you have to pack it..LOL.
This morning, I turned on the Walton's--I love watching the earlier episodes of the Walton's when Olivia is still there and John Boy is the real John Boy..LOL. The epsisode was about Thanksgiving, and they were gathering walnuts and pumpkins, oh I can't wait to start getting ready for fall, what a lovely season.
When I Get back to Cali, I am going to start my Garden. I tried here in Georgia, but the bugs just love me, especially the bees and wasps they have chased me frantically back into my home many times. It is always a game for me to get the mail--my neighbors must think I am crazy, how I run to and from the mailbox..LOL. Plus the soil here in Georgia is funny--I am not used to it.
I am going to pack my herbs and spices today---I used my dehydrater to dry my herbs and they came out very nice, so I know they will last awhile.

Bananas, California and over 30 Boxes
Tomorrow is trash day, so I have to get everything out of my fridge that I need to throw out. I have bananas frozen in the freezer that I was going to use to make banana bread, but since I will be leaving in about a week, I will not be able to do it. I also have homemade chicken stock, that I have to get rid of--Oh well, I can't wait for this to be all over, so I can get back to normal, with my daily life as a wife and mother.
Condiments--I am thinking of getting a cooler so I can keep my condiments--I have a lot. I will think about that one.
I am on box 32---so many more to go. I washed all my bathroom rugs, so they will be nice and clean for our new home.
I was thinking of making hot wings tonight for dinner, as my children love them. I am trying to use everything I have and not buying anything else. I will give what is left in my freezer to my SIL--she doesn't cook that much, so giving her my bananas and stock would be a waste--she would just laugh at that--but I am sure she can use the meat, hopefully.
Kevin is as happy as can be at his job in California, I can just hear him smiling as he talks to me on the phone. That is good, I am glad he is happy. I am really going to miss it here, but I am sure God has a plan for all this--I guess I am just ment to live in California..LOL---everytime, I try and leave, I am going right back. My son is very excited to be able to surf again, and my daughter is very excited to see her cousin who is of similar age to her. It will be nice to be able to see my Grandma on a daily bases, and to have my friends come over for coffee--the women I met here in Georgia, all work outside the home, so it will be nice to have some SAHM's once again. Over Easy
Eggs--I love eggs. Over easy, over medium, over hard, poached, sunny side up, basted, deviled, egg whites, scrambled..etc--there are just so many ways to cook them. If I am running low on eggs, I feel that my kitchen is just not right----I usually buy the big carton of eggs that has 2 and half dozen eggs in them. Before you buy them, always check for cracks. I also hard boil a bunch, for a qucik snack for the kids, or to top on my salads. Also, nothing fancys up a table more then having a dish of deviled eggs on it. Whenever I am in the mood to make deviled eggs and put them on the Table, Kevin will always say, "Wow, what's the occasion?" I just say, "because I love my family" Okay, I do show my love in a lot of different ways, not just making a dish of deviled eggs--that is kind of funny..LOL.
My Simple Deviled Egg Recipe:
Hard boiled eggs
Real Mayonaise---Never Miracle Whip
Salt and pepper to taste
Paprika to sprinkle over the top
That is all I do----then after I fill the eggs with the filling ( I think we all know the basics of deviled egg making, so I don't think I have to explain the boiling process, the cutting in half taking out the yolk and creaming it together with the mayo, blah, blah, blah) I sprinkle paprika over them to make them pretty. I know a lot of people add mustard, and all sorts of ingredients--I just keep mine very simple. Sometimes, I will stick an olive in the center--Kevin's family showed me that little tip--it must be a Southern thing though:)
I took out some ground beef for dinner, I will make some patties and make a veggie---my kids aren't really big eaters, and with Kevin still in California, I can't go over board on my dinners with kevin away, or there will be too much waste, and I try not to waste food.
It rained through the night, so it is all wet outside--I think blue is a nice color dress to wear on a semi-rainy day---I have my hair clipped back with some bobby pins, it is still down, but pulled back, so it won't get in my way while I am packing--ahhhh, yes, I said the P word...LOL...I am still packing, I bet you thought I wasn't going to mention that--well, I will give a box count a little later---I have packed so many, I have to actually re count them.

Crocheting, Boxes and Trader Joes
Now, no post would not be complete without me talking about my packing..LOL. Her are some of the boxes I have packed. I have a total of 20 boxes packed so far. I packed my beloved Bread Machine--and my sewing machine will soon follow. It is funny, after the move and I start unpacking everything, it is like Christmas..LOL.
Okay, onto other things. Kevin arrived safely in California this afternoon. It seems wierd that I am here in Georgia and he is back in California. One thing I am looking forward to in California is shopping at Trader Joes. I love that store. Plus there are many more Farmers Markets there then I was able to find here. I am not quite sure what i am going to cook for dinner, I have been working hard packing today, so I think I may make grilled cheese sandwiches and chicken noodle soup--my kids love those kind of dinners:)

Thrilled
Oh my!!! I am so thrilled. The house, I had mentioned previously fell through---BUT--we found an even better one---Oh I am so excited. Kevin is flying out tomorrow to sign the papers. I sure am going to miss my home here, but I am very happy that I will have something lovely to go to when we arrive. I will take pictures and share them here. I will get there just in time to join you all in fall decorating, yay!!!!
I am still packing, I have not started the kitchen yet--if you look at my post titled Kitchen, there is a picture of my kitchen, I did take all my ceramic cows down and knic knacs and packed them away. This is a very overwhelming project, but I think to myself, if this is the worse thing I can complain about, I think I am okay..LOL--God is Good!!!
Today, I am wearing a light beige top, that is very feminine with a darker brown skirt. My daughter chose a denim skirt with a grey shirt---she is a cutie patootie:)
Dinner tonight will be a seven bone roast, mashed potatoes, green beans, and a salad with all the fixings:) I will also make a homemade gravy from the drippings from the roast--yummy!!!
The weather here in Georgia, is very nice. I do hope for one last Thunder storm before I leave, I sure am going to miss the rain--but one thing I am not going to miss are those pesky mosquitos--yucky. Yesterday there was a praying Mantis on my window, I love those bugs--I took a picture of it, as you can see:)

So Much To Do!!
I ran out of packing tape, so I went to the store and bought some more, BIG ROLLS this time...LOL. I think I am going to do my kitchen last, I think it is going to be my biggest job, but, I still need a lot of stuff out, to be able to feed my family for the next week--I don't do fast food--yucky. I made a homemade pizza the other day, the kids really enjoyed it, so I think I may make another today.
It is a warm day here in Georgia, a beautiful day actually. I am wearing a black skirt, with a black blouse with pink little flowers all over it---my daughter is wearing a pink dress, she looks adorable. And, of course I am wearing my ever faithful apron, especially when I cleaned the oven this morning---it looks so nice and clean.
I am going to try and pack as much if not more then I did yesterday----I am doing my best to stay organized. Moving is not easy, especially across country. I can not wait until I am done and I can stop talking about it..LOL---

Box Count:
On another note, I don't know if I have mentioned this yet, but my husband has asked me to only use Tide on his clothes---Oh my, what happiness I had, when I found the new Tide products---the Simple Pleasures--oh they smell lovely. I bought the one in the purple bottle with matching Downy fabric softner----when my homemade fabreeze runs out, I am definately making some with the Lavendar and Vanilla scent by Tide/Downy. It will be in my new home though when I do that. New home, new scent..LOL.
Take a few tablespoons of your favorite liquid fabric softner and put into a spray bottle, add water until filled. I spray it everywhere, and my home smells lovely:)

Cookbooks
I also have a cookbook my son had made when he was 7, it is absolutely precious--one recipe is for cookies, where I put them in the oven for 10 minutes at 200 degrees.. :)
I have to also add, that after everything is packed up, and we are about to leave, the absence of my cookbooks and being able to cook and bake is truly missed.
It is nice to move into a new place and organize and put everything in its proper place--everything so clean and fresh and new. I am excited to meet new people in my neighborhood, and see my old friends again. The one thing a few of my girlfriends said they had missed when I left California, was them coming over to my house, and always smelling something either cooking or baking--it is so nice to be missed..LOL.....I will update a little later on my famous Box count--until then, you all have a wonderful day:)

Countdown:)
So even though I have done this moving thing quite a few times, I am always open to tips on making the move smoother--any tips out there????
Last time when I moved the box count was 160--so I am hoping I can do better then that:)

Dresses
They look a lot better on, but it is hard for me to take a picture of me in it and show the full length of the dress LOL----
Dresses--I just love dresses:) 99% of the time you will catch me in a dress. For my Birthday, Kevin wanted to know, what I wanted---I told him I wanted some new dresses. I just can not see spending an abundance amount of money at a restaurant or on flowers----I like things that will last--so he gave me some birthday money---now, I could go to an expensive store, and buy maybe two or three dresses, but anyone that knows me knows, I would never do that..LOL. So off to a thrift store I went----I had 350.00-----I ended up spending 92.00 and bought myself 6 dresses, 5 tops, 5 skirts--and 5 dresses for my daughter. I also bought, a book and some really neat things for the house.
Do you like pretty dresses? I just feel like such a girlie girl in them, so feminine-->Isn't that how women are suppossed to feel and look?

Ravioli Recipe
(*Note---to glue the wontons together to keep the stuffing in, I just use water around the edges and they stick just fine, and look just like raviolis)
For the sauce you can use bought or homemade--whatever you like. In my sauce, I added ground beef, because my husband is a meat eater, and as long as my dinners have meat in them, he is happy:)
Here is a wonton ravioli recipe, I found on the net that is similar to mine, except, I put the meat in the sauce not the ravioli: It has more percise directions then I do..LOL:) Plus, this one is for eating it normal, like pasta--if you want to make the casserole, skip the boiling process and just put them in the casserole dish like I said earlier, they cook beautifully.
Wonton Ravioli
Try using wonton wrappers for a quick and easy ravioli(Serves 4)
Ingredients:Filling:8 ounces lean ground beef
1 cup ricotta cheese
1 egg, lightly beaten
1/4 cup parmesan cheese
1/4 cup mozzarella cheese
1/2 tsp dried oregano or 1 teaspoon fresh oregano,
chopped
1/2 teaspoon saltPepper to taste
1 pack wonton wrappers
1 egg plus 1 tablespoon water
whisked together
1 jar spaghetti or marinara sauce
Directions:
Prepare filling: Cook the ground beef in a medium skillet over medium high heat, until no longer pink. Drain and pat dry with paper towels; cool.
In a large mixing bowl, stir together ground beef, ricotta cheese, egg, Parmesan, mozzarella cheese, oregano, salt and pepper.
Assemble ravioli: Lay wrappers on clean work surface. Place ¾ tsp of filling on one side of wrapper. Brush with egg wash. Fold opposite side over to cover filling to a create a triangle.
Press edges to remove air and seal edges. A cookie cutter may be using to cut ravioli into a moon shape.
Place ravioli on a baking tray lined with a tea towel sprinkled with flour or cornmeal.
Bring a large pot of salted water to a boil. Add ravioli and cook until al dente, about 3-4 minutes.
Drain and serve with warmed sauce.
Growing up in an Italian household, I was taught how to make homemade sauce very well--but I do cheat occasionally--->shhhhhh, don't tell my Grandma.
As for the Chocolate chip cookies I use the recipe in my Betty Crocker Cookbook:

Buttery Chocolate Chip Cookies
An easy chocolate chip cookie to make with extraordinary results!
1 1/2
cups butter or margarine, softened
1 1/4
cups granulated sugar
1 1/4
cups packed brown sugar

tablespoon vanilla

eggs

cups Gold Medal® all-purpose flour
2
teaspoons baking soda
1
teaspoon salt
1
package (24 ounces) semisweet chocolate chips (4 cups)

Heat oven to 350ºF. Mix butter, sugars, vanilla and eggs in large bowl using spoon. Stir in flour, baking soda and salt. Stir in chocolate chips.

Drop dough by rounded measuring tablespoonfuls about 2 inches apart onto ungreased cookie sheet.
3 .
Bake 12 to 15 minutes or until light brown. Cool slightly. Remove from cookie sheet to wire rack; cool.

OOPS-->forgotten food
I had mentioned in an earlier post about some food I had made, and promised pictures. Oops, I totally forgot---but here they are, better late then never, right? This is one of my salads that I make--Kevin's favorite--topped with homemade Ranch dressing. This is the recipe I use. It is so very simple, and so much better then any store bought Salad dressing.
Ranch Dressing:
1 1/2 C Mayonnaise
1/2 C Buttermilk
1 T Red Wine Vinegar
1 T Sugar
1 tsp Garlic powder
1 tsp Onion powder
1 T Dried Parsley
1/2 tsp Dill
1/2 tsp Salt (optional)
1/2 tsp Black pepper
Dash of Paprika
Whisk ingredients together, and refridgerate one hour before serving:)
These are my homemade Chocolate Chip Cookies
Baked Ravioli
For the baked ravioli, I used Cheddar cheese instead of Mozzerella--Kevin perfers Cheddar to any other cheese--and I have to say, the baked ravioli turned out very yummy. I used wonton wrappers to make the raviolis too:)

Happy Anniversary
Today is mine and Kevin's Wedding Anniversary:) YAY. He is out of town until Friday, so there won't be much celebrating today. That is okay, we will be together this weekend, and plus my son will be home too. Maybe this month, will be my month to conceive--I sure hope so.
Tomorrow is trash day--which means I will also do my weekly wipe down of the refridgerator, and also make sure all trash is out of the home, and the can is put to the curb--the trash pick up comes pretty early in the morning, so I like to get it all ready the night before.
Tonights dinner will be fish and veggies and a nice salad, for Alexis and me. I am going to take a chicken out of the freezer, and thaw it. I will make chicken and dumplings for Friday--I will cook it tomorrow though, so we can have some chicken with our dinner. I also have some avacados that need to be used soon--We love avacados at our house. In California you can find avacados on any restaurant menu or at any market--but here in Georgia, I don't think I have ever seen avacado in a restaurant---I also find it funny how sweet tea is so very popular here, and in California, there is no such thing..LOL. When Kevin and I first married he had to teach this California girl how to make it----he says I make it perfect. I am so going to miss Georgia---it is so lovely here, I love the privacy I have, and all the trees all around me. I know God has a plan for all this, and it will be nice to be close to my Grandmother again--I know she needs help getting to the store because she can no longer drive, and my sister is not always the most reliable. Before I moved here last year, every Thursday I took her shopping, the day after the sale ads came out--we always had a wonderful time. She loved to go to Costco and taste all the samples.....
Yellow is such a happy color--and that is why I am wearing yellow today--a really pretty button down dress--it is a pale yellow and I feel so femine in it. The weather is nice too. The forecast says it will rain, but it hasn't yet--I just adore rainy days----you don't get too many rainy days in California, so I really appreciate them here in Georgia. Happy Tuesday
Dinner tonight is spaghetti--my daughter loves spaghetti---it must be the Italian in her.
With my son on Vacation and Kevin out of town, laundry was rather easy--I did two loads and I am finished--I tried the new Tide Lavendar, and ohhh it smells so pretty. I am going to make my own febreeze with the fabric softner--I love it when my home smells pretty. Especially when the holidays start to approach us, and all the wonderful smells that come with it from baking and cooking. I just love holidays. I especially love the holidays here in Georgia. In California it just doesn't feel the same--I mean sometimes at Christmas time, it is 90 degrees out--that is just not right..LOL. Oh, how I will miss the seasons here in Georgia:(
On Thursday, I am going to make Cinnamon rolls---I saw Paula Dean making them on her show, and Kevin had remarked that he loves homemade Cinnimon rolls--so I shall make some for him, so when he returns he can have some with his coffee. Plus, I am sure my children will enjoy them too. Here is the recipe, I am going to use-->

Dough: 1/4-ounce package yeast 1/2 cup warm water 1/2 cup scalded milk 1/4 cup sugar
1/3 cup butter or shortening 1 teaspoon salt 1 egg 3 1/2 to 4 cups all-purpose flour
Filling: 1/2 cup melted butter, plus more for pan 3/4 cup sugar, plus more for pan 2 tablespoons ground cinnamon 3/4 cup raisins, walnuts, or pecans, optional
Glaze: 4 tablespoons butter 2 cups powdered sugar 1 teaspoon vanilla extract 3 to 6 tablespoons hot water
Heat oven to 350 degrees F.
In a small bowl, dissolve yeast in warm water and set aside. In a large bowl mix milk, sugar, melted butter, salt and egg. Add 2 cups of flour and mix until smooth. Add yeast mixture. Mix in remaining flour until dough is easy to handle. Knead dough on lightly floured surface for 5 to 10 minutes. Place in well-greased bowl, cover and let rise until doubled in size, usually 1 to 1 1/2 hours.
When doubled in size, punch down dough. Roll out on a floured surface into a 15 by 9-inch rectangle. Spread melted butter all over dough. Mix sugar and cinnamon and sprinkle over buttered dough. Sprinkle with walnuts, pecans, or raisins if desired. Beginning at the 15-inch side, role up dough and pinch edge together to seal. Cut into 12 to 15 slices.
Coat the bottom of baking pan with butter and sprinkle with sugar. Place cinnamon roll slices close together in the pan and let rise until dough is doubled, about 45 minutes. Bake for about 30 minutes or until nicely browned.
Meanwhile, mix butter, powdered sugar, and vanilla. Add hot water 1 tablespoon at a time until the glaze reaches desired consistency. Spread over slightly cooled rolls.

Monday, Monday, Monday
Playing around on my blog---I have come across a few blogs lately that are so precious. I do not like this format too much, I mean it is nice, and I am able to write my thoughts but I want it to look more girlie girl with pretty pictures and such. I am pretty good on the computer, but I just can not figure this blog out----It will not let me space my paragraphs--WHY???
- Maybe these little circles will help--LOL
- Kevin did not place in his competition this weekend, but that is okay, we had a lot of fun.
- After the dinner, I excused myself to the restroom--well a lady that was sitting at our table used the bathroom, and then left ---she didn't wash her hands--ewwww. How can someone not wash there hands????
- I went to the grocery store and bought some needed things, like detergent. I bought the new tide, lavendar with matching fabric softener---oh the bottles are so pretty
- I am making another pot of homemade pea soup--yummy
- The day has gone rather quickly, it is already 3:00.
- I will putter around my beautiful home, and do some cleaning and organizing. The house is pretty clean, but the bedding needs to be washed, and the toilets need to be cleaned---how often do you all clean your toilets? Even if they look spotless, I still clean them. My Grandmother said, she has never seen toilets look so clean..LOL----I learned form the best:)
- I really want to order some books, but I am not sure if I will even be here----
- Did I mention, the children's Bible I bought, oh it is precious and it is so easy for my daughter to understand, she loves it and can't wait until I read it to her each day.
- It is a beautiful day here in Georgia----the sun is out and the birds are singing--now if those huge flying bugs would just stay out of my way...LOL

Happy Saturday
I have been looking online for houses in San Clemente, Ca----Oh my goodness, it is so expensive. When we lived there last year, our rent was 1,000--now I can not find anything for under 2,000---and the places are so small too. I would never be able to find a beuatiful home like the one I have here that we could afford-buy or rent:( I guess, I should mention Kevin wants to go back to California, I am so broken hearted about this decision, but I don't have a choice, so I have made peace with it, even though, I think I am entitled to a pout or two.
We have a special dinner to go to tonight at his company, and they will announce the winners from this morning--I hope he wins---the prize is money--woohooo! I have not decided what to wear yet---I know it will be a dress, but which one??? LOL.
Tony will be home on Thursday--I am so happy to have him back home. I know all his friends miss him too, and his little dog:)
Alexis, is such a good girl---a total girlie girl--just like her mom..LOL She has asked me to get her ears pierced---ummmmm---I don't think she realizes what it actually means. I think I will take her to see it done. I told her I really want her to wait until she is older to make such an important decision. We shall see:)
BUGS----I have never seen so many different kind of bugs in my life, since I have been in Georgia----such big flying things, especially at night, around the porch light--ewww.
I still have not figured out how to space my paragraphs on this blog--it is very frusterating--it looks so nice when I type it out, and then when I publish it, it looks different--ugh!

Alexis Day
Tomorrow is Trash day, so I emptied all the trash cans, and cleaned out the fridge, of leftovers----I am also going to tidy up Alexis's room--Tony's room is still spotless, since he is in Washington.
I am not pregnant this month, hmph!!! I know God has a plan, I just really want another baby, or two, or three. We shall see.
Have you ever watched the TV show, Wife Swap? Oh boy, that show is so inspiring..LOL--when I see how some of those women care for their homes, it makes me want to clean and cook even more----Some of those women are so filthy, ewwww----okay, I shouldn't judge, but they are filthy..LOL.
It is hot here in Georgia, I feel terrible, that Kevin has to work in this heat---but I am greatful, that I am able to stay home and care for our children and our home---there is nothing more then I would rather be doing---I can't call what I do a job, because to me it is not a job, it is a pleasure and it is my whole life!!!!

Since it is Alexis day, she wants fish, so I will make her some fish---she doesn't care for ground beef, but Kevin loves it----it really isn't a bother to make both, it is rather easy, if you know what you are doing. It really blows me away, when a woman doesn't know her way around the kitchen---I think they act like that for attention--I mean if you know how to read and have commen sense, I think anyone can cook......if more women would concentrate on home and family, and not on jobs out of the home, the world would be a better place. Okay that is all for now--will update soon:)
