What a week! My Grandmother is off to Chicago this morning for a month or maybe longer. My aunt is very ill and my grandmother is going there to help her a bit. I love my Aunt, she took care of me for 6 months when I was a small child, when my mother fell ill, before I flew out to California---she is such a great lady and is in my prayers--she is fighting bone cancer right now. I am also going to miss my grandmother terribly--she is my best friend.
I was at my Grandmother's quite a bit this week tying up all loose ends while she is going to be gone. She has Macular degeneration so she can't see too well, so I was doing all her bills and such--I am going to miss her soooo much.
I also went to the Vegetable store (that is what my Grandmother calls it..lol) It is really Henry's Farmers Market. The prices were fantastic, so I bought quite a bit. After I send this post, I am going to go in my kitchen and work on all the veggies, cleaning them, chopping them and putting them in there own containers--right now, my refrigerator looks like a vegetable explosion.
Dinner tonight is going to be shishkabobs on the grill--I have everything for them---except pineapple, so I am also going to run to the store and pick up some pineapple and I also need some juice for us to drink.
My list of veggies I bought: (and some fruit)

I am going to make some salsa--and was wondering if any of you have a simple recipe for salsa, using Jalapeno peppers? Rebecca---you keep popping in my mind with this one. :)

Hey Julieann, I went grocery shopping today too. :-) Kroger had a 10 for $10 sale on colored peppers, so I bought 3 yellow and 3 red, they look so pretty and are so tasty in salads!
I finally found Tahini in my grocery store, I'm going to make your humus this weekend. Question: Do you have to refrigerate the things after it's opened? I would think not, since you don't have to refrigerate lots of other nut butters, but I thought I'd ask. It doesn't say so on the jar, either.

I'm very sorry to hear your aunt has bone cancer.
My mom passed 13 years ago from Bone Cancer , its a very painful disease. Prayers going up for your aunt.

A quick and easy recipe for salsa--I typically go to a local Mexican restaurant once a week with a friend and the salsa is just wonderful and have been trying to figure out what ingredients the owner puts into it. So, last weekend, I went home and gave it a try. This salsa is on the thinner side. Chop fine some onion, cilantro, garlic, and jalapeno. I made the mistake of using one whole jalapeno and it was tooooo hot. Then I poured one can tomato juice (from the six-pack cans of tomato juice) over the chopped veggies, and then added 1-2 teaspoons of tomato paste to thicken. It's really easy and you can adjust the veggies as you like.

We absolutely love fresh tomato salsa. We dice roma tomatoes and salt and pepper them, then add diced onion, minced garlic, cilantro, lemon or lime juice, or a combo of the two. Adjust to your taste before adding jalapeno. A food salsa will taste wonderful even before adding the hot stuff. Use the peppers sparingly, it's easier to add more than to take them out! I always make some mild salsa for the young kids. Add more salt and pepper to taste.

I have an easy salsa recipe on my blog (under the sparkpeople cookbook). Tomatoes, onions, jalapenos and some lime juice. Salt and pepper. You can chop by hand or in the food processor. I just made it Sunday for the Baby Shower I hosted at church.
