*MY GRANDMOTHER'S KOLACHKI'S*


*Kolachki Recipe*
3 oz cream cheese
4 oz unsalted butter (1 stick)
1 1/4 cups all purpose flour
 
Jam (My grandmother always used apricot)
Plus some powdered sugar to dust the cookies when they are done.

Blend the cream cheese and butter
Mix in the flour, a third at a time, until combined.
Form into a ball, wrap with plastic wrap and refrigerate overnight or for at least a couple hours.
Preheat the oven to 350*
Roll out the dough on a lightly floured surface into a nice thin layer, about a 1/4 inch thick. Trim the edges off the dough and cut it in to 2 1/2 in squares.
Put about 1tsp of jam in the middle of each square and fold over opposite corners. Seal them together by using a little water to help them seal,
Place the cookies on a lined cookie sheet and bake for about 15-18 minutes until lightly golden around the edges.
Let cool for about a minute before carefully transferring to a cooling rack. Dust with powdered sugar before serving.
