Any simpler:)

I had the foodnetwork on the other day, and there is a show called quick fix, that I enjoy. The lady made this recipe--it was so easy and simple--and looked really good. So, when I do my shopping this weekend, I am going to get the ingredients and make it. What do you think of the recipe? Have you ever tried anything like this?

1 pound boneless and skinless chicken strips
1 tablespoon Dijon mustard
1/2 cup grated Parmesan
2 teaspoons olive oil
To make chicken strips, coat chicken all over with Dijon mustard. Place Parmesan in a shallow dish or plastic bag, add chicken and turn (or shake bag) to coat. Heat olive oil in a large skillet over medium heat. Add chicken and cook 5 minutes per side, until cooked through.

Tuesday's to do's:

I am room mom today--short day on Tuesday
Alexis has a play date with her best friend
One load of laundry
Vacuum
Swish Toilets
Sweep Kitchen
Decide what to make for dinner tonight with the chicken thighs I have.
..and what ever else I get motivated to do---like put a row on my afghan.

Those chicken strips sound very good...I watch that show also. She makes good things that are simple.

Today the girls and I are going to take a nature walk. It is in the upper 60's. I will be blogging about it later.

Well...

After that sweet note this morning, Hubby called and invited me to lunch. I just got back and am drying clothes. Then it'll be time to pick up the kidlets. We'll do homework till Hubby comes home, then dinner and family time...enjoy your day!

The chicken sounds really good! I'm going to have to try it soon. We ran a couple of errands and the girls have played outside all afternoon - it's 70 degrees F, here!

I've done something very similar with the chicken strips: I add some Season-All or Adobo seasoning to the Parmesean cheese. It gives it just a little "kick".
