Propagating!!

 


I am enjoying learning to prorogate.
  My daughter actually taught me how to do this.

Snow was predicted today, but it didn't.  It was just blistering cold.
BRRRRRRRRRRRRRRRRRRRRRRRRRRRRRRRRRRRRRR.

My daughter and I went thrifting today, and we had some fun.
I am really trying to make an even more conscious effort, to reuse, recycle and reduce.
Making old things new again and composting things.  Planting and gardening.  Just being more mindful and not being so selfish and being more aware and taking care of God's green Earth better than I have.

We basically have a four day weekend from school.  Thank goodness.  I am helping my son with Algebra.  I am really good at algebra, but teaching it is another thing...tee hee.  He is smart so he gets it quick, whew!!!☺

Family Fun night tonight, was B and W Burger Factory.
Night off from the dishes......woohoo.

I was extremely tired this morning and over slept.....I didn't have any thing pressing.  There wasn't school today so I didn't set my alarm..Boy, did I sleep.  I slept long.  I must have needed it. 🤍

Yes, I did!!

 

I know Valentine's is a few weeks away, but I bought the candy hearts. Yes, I did , I bought some and put them in a pretty jar and they are displayed on my counter.  The pastel colors of the hearts look so pretty :)

I painted these little wooded hearts a delicate pink....my dining room has always had touches of pink so these will be a mainstay in there.


Last but not least, my Peloton makes me so happy, so at the mall I visited the Peloton store...tee hee!!!

     For dinner I made roasted chicken, rice and mixed veggies, with a beautiful green salad.

I also ran to Kroger today and picked up a few groceries.
The rain the last couple days has been full force.  
The sun came out this afternoon, YaY!!!
I appreciate the warmth of the sun so much now, more then ever.

I did yoga this morning and it feels amazing.
I try and do some sort of yoga on the daily!!
I was able to run yesterday, a snuck it in between rain drops....running soothes my soul.

 I woke up with a feeling of positivity.  This year is going to be absolutely amazing, I just know it.  I am working on my vision board and I am almost sure of my word for the year, that was a bit of a struggle, because I wanted so many words...lol Word reveal coming soon.

 Today is the first blank page of a 365 day book.  

Let's write a great one.


My daughter gave me a 5 year journal, for Christmas and it is called, ONE LINE A DAY.

I am going to have so much fun with this book.  Keepsake for sure.  I will take a picture of the book and share it with you all in another post.


I hope this new year is blessed for all and that health and wellness touch all your homes.

Christmas Cracker Candy

Feel free to add 1/2 cup of coconut flakes on top once you’ve poured the melted chocolate.

You can use darker chocolate with higher percentages of cacao, but these chocolates sometimes become brittle and separate from the cracker layer.

We recommend cooling this candy overnight in the fridge since cooling in the freezer can cause the chocolate layer and the cracker layer to separate when you break the candy. If you need to freeze, let the crackers warm up for about 10 minutes before cracking.

Ingredients

28 to 35 saltine crackers (about one sleeve, enough to line your tray)

1 cup (220g) firmly packed dark brown sugar

1 cup (225g or 2 sticks) unsalted butter

1/4 teaspoon kosher salt

1 teaspoon vanilla extract

2 cups (10 to 12 ounces) chopped good-quality semi-sweet chocolate

Method

Preheat the oven to 400°F:

Line a 10x15-inch jelly roll pan with nonstick aluminum foil (preferred) or regular heavy-duty foil, making sure that the foil completely covers the bottom and sides of the pan. If using regular foil, spray lightly with baking spray. Place the saltine crackers in a single layer on the bottom.

Make the caramel sauce:

Place the brown sugar, butter, and salt in a medium-sized saucepan. Cook on medium heat, stirring frequently, until the butter melts. Continue to cook, stirring often, for another 3 to 5 minutes, until the mixture comes to a boil and in color and sugar melts and emulsifies with the butter into a smooth sauce. Do not allow the mixture to boil longer than 30 seconds. Remove from heat and stir in the vanilla extract.

(Note: You're not actually making true caramel here, so you don't need to be as precise or worry about the temperature of the caramel. Just make sure it comes to a boil throughout and not just the edges and wait for it to darken slightly, then continue.)

Simple Tip!

If you're nervous about your caramel turning out grainy, use a wet pastry brush to wash the sides of the pan as the caramel cooks. This will help to make sure all of the sugar melts evenly. Keep in mind that a brown sugar caramel has a different texture than traditional caramel, with a sandier, softer texture.

Pour the hot brown sugar mixture over the saltine crackers:

Spread to evenly coat the crackers.

Move the pan to the oven:

Bake for 5 minutes. The caramel will be hot and bubbly throughout.

Melt the chocolate:

Place the chocolate in a microwave-safe bowl. Cook it in the microwave in 30-second intervals at full power, stirring each time, until the chocolate has fully melted (about 1 1/2 minutes total).

Pour the chocolate over the baked crackers:

Once the crackers are done baking, remove from the oven and allow to cool for 1 minute exactly, until the caramel is no longer bubbling and the crackers settle back into place. Then pour the melted chocolate over the crackers. Use a spatula to spread the chocolate evenly over the top.

Chill the crackers overnight:

Let the crackers cool to room temperature then move to the refrigerator and chill over night.

Crack the crackers:

The crackers will form a single sheet once cool. Remove from pan and gently peel the foil away, being careful not to tear the foil. (If any bits of foil tear and get stuck in the caramel, break those bits away and discard.) Cut the candy into snack-sized pieces using a chefs knife (you can use your hands, too, but I find it easier with a knife).

Store in an airtight container in the refrigerator for about a week or in the freezer between layers of parchment paper for up to 2 months.

Egg Nog!!!

 EGG NOG**

Ingredients

  • 6 beaten egg yolks

  • 2 cup milk

  •  cup sugar

  • 1 teaspoon vanilla

  • 1 cup whipping cream

  • 2 tablespoon sugar

  • Ground nutmeg

Directions

  1. In a large heavy saucepan mix the egg yolks, milk, and the 1/3 cup sugar. Cook and stir over medium heat until mixture just coats a metal spoon. Remove from heat. Place the pan in a sink or bowl of ice water and stir for 2 minutes. Stir in  vanilla. Cover and chill for at least 4 or up to 24 hours.

  2. Just before serving, in a mixing bowl beat the cream and the 2 tablespoons sugar until soft peaks form. Transfer chilled egg mixture to a punch bowl. Fold in the whipped cream mixture. Serve at once. Sprinkle each serving with nutmeg. Makes about 10 (4-ounce) servings.

    **  The original recipe was Better Home and Gardens, but it has been changed by me to fit our likeing.  I am giving credit to BHG for the base of the recipe

Christmas Baking!!! No-Nut Sandies or Snowballs ;)

NO-NUT SANDIES

Makes about 50 cookies

Note: Recipe from my home to yours and as always, made with love :)
2 ½ cups All-Purpose Flour
¼ cup Granulated Sugar
½ lb Unsalted Butter
2 tsp Vanilla
1 cup Ground pretzels
Powdered Sugar (to coat)
1. Preheat oven to 350°F. Set up powdered sugar station by laying out parchment paper with a
large amount of powdered sugar on top and extra paper for cookies to cool on 🙂
2. Cream butter and granulated sugar. Add flour, ground pretzels , and vanilla and mix
well.
3. Shape into 1.25" balls and place about 1" apart on ungreased cookie sheets. Bake for 13 minutes or until the bottoms of the cookies are slightly brown.
Place immediately on cooling rack.
4. Roll each cookie in powdered sugar as soon as it's safe to handle them. The hotter they are, the better the sugar will stick. Complete the entire sheet of rolling in the sugar before starting the second coating. It's a balance and work quickly...tee hee (Santa is watching) *Allow to cool completely
These are my fathers favorite Christmas cookies so they are very special to me. Back in the day we always used nuts instead of pretzels. To be mindful and safe of a nut allergy we use pretzels for the crunch .

The weather this week, is going to be very cold.  Do you see the 9 on Christmas Eve?

I do love to dress up in cute winter clothes, but I am not a fan of frigid cold, a little cold, but 9 degrees...no.........lol.

I am a California girl at heart,  but I do know what cold is.  I was in Chicago for a for a few years and walked in many a blizzards.  I thought my nose would snap off and my jeans froze to my legs.  I prefer warmth.....
