Chicken and Rice a Roni Casserole

Description
A homey, comforting chicken casserole.
Ingredients
1 box Fried Rice Flavor Rice A Roni 6.2 Oz
Additional Required Ingredients Specified By Rice A Roni Package
1 cup Sour Cream
1 can (10 Oz. Size) Cream Of Chicken Soup
Salt And Pepper, To Taste
Garlic Powder, To Taste
4 cups Shredded, Cooked Chicken
1 whole Sleeve Of Ritz Crackers
6 Tablespoons Butter, Melted
Preparation
Preheat the oven to 375 degrees.
Prepare the Rice a Roni mix, using the additional required ingredients specified on the package and cooking it according to package instructions.
While the Rice a Roni cooks combine the sour cream and soup, mixing well. Season with salt, pepper, and garlic powder to taste.
Stir the cooked, shredded chicken and Rice a Roni into the sour cream/soup mixture. Spoon this mixture into a greased 11-by-7-inch casserole dish.
Crush the Ritz crackers, then mix in the melted butter until well mixed. Sprinkle the crackers over the casserole evenly.
Bake for 25-30 minutes or until it is bubbling and the crackers are lightly browned.

Green Bean Casserole

Green Bean Casserole is probably my most favorite holiday dish.
I serve it at both Christmas and Thanksgiving. I have two recipes, and both require the crunchy onions on the top

My recipe that is super easy:


4 cans of cut green beans

2 cans of cream of mushroom soup

Mix those two ingredients together and put in a buttered casserole dish, cover it with foil, put in the oven at 350' until cooked through, about 30 minutes.  After you pull the dish out, take off the foil and top with the crunchy fried onions.  You can uses French's Onions or Trader Joe's.....LOVE Trader Joe's!!!




My second recipe for Green Bean Casserole

Make a béchamel sauce and add mushrooms....this is your cream of mushroom sauce.
Fresh green beans that you snip the tops and put in the crockpot with veggie stock or chicken stock and cook until tender on low.  A few hours.  Scoop beans out and put into the béchamel sauce and put into buttered casserole dish, heat in the oven until heated through...taste it..tee hee...if it's good it's done ...sprinkle with the fried green onions.


Salt and pepper everything the way you like :)

This menu is a bit on the odd side.  With some family traveling, some working late, some eating big lunches and Thanksgiving Dinner upon us, we had easy dinners.  These dinners were in no particular order they are where went and what we had. :)

Turkey Pan Fried Burritos

I used turkey from Thanksgiving and shredded it, sprinkled some taco seasoning on it. I warmed some tortillas up.  They are easier to work with when they are warm. I filled them with turkey, pico de gallo, and lots and lots of cheddar cheese. I folded them burrito style and put them in a buttered pan that was heated. I cooked them like grilled cheese until they we were golden brown. I turned the heat off, sprinkled more cheese on top. Put the lid on for the cheese to melt. I took them off the heat completely. I cut up lettuce and made fresh guacamole and topped them with sour cream too ♥️ 




Put on a Christmas plate.....and made with lots of love by me :)

Day Planner Sheet


 Happy Tuesday...is it Tuesday?  It feels so much more like Saturday.  It has been another busy day in my daily life. The holidays are fast approaching and I am ready for them...lol. I made a list of questions and printed them out for discussion questions at the Thanksgiving day table.  Different..
I am looking forward to black Friday, it is like a date with my husband.  We tie up loose ends of our Christmas shopping and is so much fun.

Hash Brown Chicken Cheesy Shredded Casserole

I bag of frozen shredded hash browns

2-3 cups of shredded chicken 

2 cups shredded cheese 

Flour, butter, milk <~~~ to make a béchamel sauce….

9 by 13 pan 

Preheat oven to 375°

Cook your hash browns as directed on the package 

Make your béchamel sauce, then add the cheese combine til it’s an ooey gooey cheesy mess 

Add chicken, combine 

Place in buttered pan then with cooked hash browns 

Cover with foil  

Cool in oven about 30 minutes then take the foil off and put back in oven for about ten minutes 


I actually fried up some onions and mixed them with the hash browns  

I also added a dollop of sour cream to the chicken mixture.

For a little spice add some jalapeños 🥰

Early Sneak Peak



Happy Day!!
I started decorating for Christmas.  I put up a white tree in my living room.  The white tree represents my mother.
Front and center is the letter G.  I put white lights all around the tree and wrapped it with white and silver ribbon with a bunch of white bows and ornaments and touches of red.  The pictures do not do it justice, as it is so much more in real life.  The photos do not do it justice.
