GREEK CHICKEN!!
Greek Chicken Recipe
4 boneless skinless chicken breasts~~~~~~~ No antibiotics ever :)
1/4 Cup Greek Chicken marinade or dressing
1/4 Cup of Chicken Broth
1 Onion Chopped
Sliced black olives...a little or a lot and a whole lot of FETA cheese!!!
Feta cheese is my absolute favorite!!!
Some oil for cooking, preferably olive oil, but veggie oil, will work also.
In a big skillet, heat oil and saute the onion until tender and transparent...take out and put aside...add more oil if needed then add chicken and sear both sides until golden brown.,add the marinade and broth. Simmer gently for a few minutes and then add back the onion..
Continue to cook until the chicken is cooked all the way through.....chicken juices should run clear and an internal temperature should be 165 or more
When chicken is cooked through...add the drained black, sliced up olives...and sprinkle all that glorious feta cheese.. a little or a lot.....you can let the chicken rest for a few minutes also with the heat off.
Prepare your plate with the sides you made. I will serve this with rice, burned brussel sprouts and cucumber salad

Then I took little mason jars and put pink tissue paper in them and stuck pretty flowers in them...VOILA!!! Happy Valentine;s Day XO XO

It was quite cold today, colder than it has been all winter. We have had a very mild winter so far...I am not sure if that is good or not....lol....is something big coming?? How is the weather by all of you?
I have had to go to the Doctor every month for the past 4 months. I have had cysts and when one of them burst, I thought it was just bad cramps...anyway, they were watching the fluid in my posterior cul de sac...it was filling up and it is now dissipating...that is GREAT!! I am thankful for that...I was a little worried :)

*Menu Plan* For the Week :)

*MY GRANDMOTHER'S KOLACHKI'S*
*Kolachki
Recipe*
3 oz cream cheese
3 oz cream cheese
4 oz
unsalted butter (1 stick)
1
1/4 cups all purpose flour
Jam
(My grandmother always used apricot)
Plus some powdered sugar to dust the cookies when they are done.

Blend
the cream cheese and butter
Mix
in the flour, a third at a time, until combined.
Form
into a ball, wrap with plastic wrap and refrigerate overnight or for at least a
couple hours.
Preheat
the oven to 350*
Roll
out the dough on a lightly floured surface into a nice thin layer, about a 1/4
inch thick. Trim the edges off the dough and cut it in to 2 1/2 in squares.
Put about
1tsp of jam in the middle of each square and fold over opposite corners. Seal
them together by using a little water to help them seal,
Place
the cookies on a lined cookie sheet and bake for about 15-18 minutes until
lightly golden around the edges.
Let
cool for about a minute before carefully transferring to a cooling rack.
Dust with powdered sugar before serving.

Trader Joe New (to me) All Purpose Cleaner and Dish Soap!!
Oh my goodness!!!
These new soaps are glorious!!
I found my scent~~~~Cedarwood and Sage. Anything that has Sage in it, is coming home with me...it is that simple. Besides, me loving everything Trader Joe's...they just get better and better!!!
I love their store so much.
I did lot of shopping at TJ'S today and I will show you my HAUL in the next post :)
I am working on a menu plan also and I will have that up soon...very soon!!
