Tiki!

Artichokes!




I know I have posted about artichokes a lot on my blog....I am going to post about them again:)

We love artichokes.
I grew up in an Italian family and my grandmother would stuff the artichokes, I mean stuff..she would make a mix of bread crumbs, cheese, parsley, and garlic, and put lots of butter on them.
I make artichokes a lot. I steam them upside down in my steamer. I have read that they steam better upside down.

I like mine plain. My kids like to dip them in the butter. They all love the heart. I scrape the choke out and they eat the heart.
I don't stuff my artichokes. We just enjoy the artichoke plain.
Little Kevin gets such a kick out of how to eat them...LOL.
It is a fun food to eat , and I think that is what first attracts the kids, and then they realize, hey, this is really good:)





I have a simple food rule in my home. You don't have to eat anything you don't like, but you first have to try it. If then, you decide you don't like it, then you don't have to eat it.
There really is a very small list of what they don't like:)

Swimming!

Oh, it was wonderful!!!
We went swimming today at the public pool..it was so much fun!!!

Little Kevin had a blast:)

The girls get to swim a lot at my sister's.
I don't get to go in the big pool that often..it was fun.

I am going to make sure we go a lot this summer.

I can't remember the last time, I actually swam in a pool without a little one holding on to me:)

Friday!

Happy Friday!

We had some fun outside:)
I did a little housework, and then we played outside. I filled the pool up, made water balloons, and we had these water shooter thingys.

My husband is home for the 3 day weekend, YaY!!!

We are going to make a Costco trip and then that is it.
We will be BBQing also.

This summer has been so nice lately, not too hot, just right:)
Perfect sundress weather, I love, love, love my sundresses!

The other day, I brought the pool out to the front yard, and while the kids were playing in the kiddie pool, I washed my car. I like my car clean. It had gotten a bit dirty. There just is not enough time in the day to do everything all the time, so I sometimes have to multi task.
I also have to learn to relax more and enjoy this beautiful summer. Sometimes though, I think of all the things that need to get done, but then I think how fast my children grow. It seems like yesterday Tony was just a little boy, I held on my hip. Now he is bigger then me...LOL. Time flies. I remember once when he was little, I had taken him to karate class, and he wasn't feeling well, so I picked him up and carried him to the car. I said, "Tony, you are getting so big, I won't be able to carry you for much longer", he then said to me, "That is okay Mom, when I get big enough, I will carry you." That memory always brings a little tear to my eye.

Tonight for dinner, I made breaded pork chops, steamed rice, corn, a fresh green salad and homemade dinner rolls:)

Hello:)

I hope everyone is having a wonderful Summer. Ours is starting off wonderful. Alexis's birthday party was a lot of fun, and a lot of work too. We had it here and it was a 70's theme. We all had fun dressing up and playing old late 60's early 70's music. I decorated the dining room like a disco, we even had a disco ball...LOL. We played twister and had a pinata. My father came down which was really nice, it isn't always easy for him to come down this way. So it is always nice when he visits. I haven't talked too much about my Grandmother, she is not doing too well. She no longer lives in the house we all lived in when I was a child, she now lives with my Dad. So I don't see her like I used too. Right now, she is spending the summer with her daughter, in Illinois. She is happy there and that is all that matters!

I bought one of those kiddie pools at Walmart, I love those pools...LOL. My sister has an inground pool where she lives, so Alexis loves going over there to swim. Little Kevin and I are happy in the little pool:) I got a bit too much sun today though, I am a bit pink...well, red.....

I decorated the home for the 4th of July, I LOVE IT!! I love our American flag, it is so beautiful waiving in the breeze. It gives me the chills sometimes, when I think about all it stands for:)

I have been doing what I normally do, cooking, cleaning, laundry, baking. All that fun stuff that goes along with being a wife and mother.

We did go to the Mall over the weekend, and Alexis got to use her gift cards. We went to Justice, Claire's, Payless, Michael's, and Walmart...I am having a little girl stay with me for the summer. She is such a sweet little girl. I love her as if she was my own. Her 10th birthday was in June also, so we combined the birthdays and had one giant party for both girls. Let me tell you, when I took the girls to the mall, they CAN SHOP...LOL. They had fun, and so did I!

We also have a new pet, a Parrot! She is beautiful. I will share some pictures of her, as soon as I can get them off my camera and on the computer. Her name is Tiki.

I think I may have shown pictures of the parrot before, I can't remember. She belonged to a friend who sold her to us.

Tonight we had Tacos...A big family favorite.

Last night we went to the Outback for dinner, love that Bloomin' Onion, YummY!!

Also, we are getting close to Fall, So you all know what that means...LOL..Fred is anxiously waiting to come out:))) I know, I know, summer just got here...but I so love Fall...:)

Pepper Sauce!

I posted this on facebook, but thought I would share it here too:)





I had to go to the grocery store today for a few things. I am making Turnip greens for dinner tonight, and guess what I found at Albertson's ???? PEPPER SAUCE...I couldn't believe it. When we would go to Georgia we would sometimes bring that back with us, because I never could find it anywhere here. They have it in the Southern section of the grocery store, who knew..???...LOL. Happy, Happy!!!

...and the Southern section is very small, it is in between the Mexican and Italian section. It has canned okra, beans, all sorts of corn bread mixes and fish fries:) It is a fun little section!

Happy Monday!

We go through a lot of cheese. So I always buy a few blocks of it.

I grate half of it in my Cuisinart.
One of my favorite Kitchen appliances.









This is one of the blocks of cheese we bought.









After I grate the cheese I put it in tupperware for easy access.





We use the grated cheese for salads, tacos, all sorts of recipes:)

On another note,
School is out in four more days~~~YaY!!

I am also, getting ready for Alexis's 10th Birthday.
Lot's to do for that.



I am getting Dr. Quinn on Netflix. I have to get the disc, because they don't have it on demand. I kind of like getting the disc better.
I am on the second season, second disc. So when everyone is asleep, I watch an episode:)

We are having artichokes tonight.

Blueberry Muffin Recipe





I made these Blueberry Muffins, and they turned out pretty good:)




Blueberry Muffin Recipe
(Courtesy of allrecipes)

Ingredients:
3/4 cup milk
1/4 cup lemon juice
2 cups all-purpose flour
3/4 cup sugar
1 tablespoon baking powder 1/2 teaspoon ground cinnamon
1/2 teaspoon salt
1 egg, lightly beaten
1/4 cup vegetable oil
1 cup fresh or frozen blueberries

Directions:
1. In a small bowl, mix milk and lemon juice; set aside.
2. In a large bowl, combine flour, sugar, baking powder, cinnamon and salt. Set aside. Add egg and oil to milk mixture; mix well. Gently stir into flour mixture just until moistened. Fold in blueberries.
3. Fill greased or paper-lined muffin cups two-thirds full. Bake at 400 degrees F at 22-24 minutes or until center of muffin springs back when lightly touched.





They disappeared pretty quick!

Potatoes:)

At Costco, we got some really great baking potatoes. They were HUGE!!
The kids split one, because a whole one was way too much. I always make extra baked potatoes, so I can fry them up the next day as hashbrowns.

To make my baked potatoes, I lay them on foil, put butter on the skin, salt and pepper, and sprinkle with onions. Poke holes in the potatoes, so they don't blow up in the oven. I wrap them in foil and put them on a cookie sheet. I bake them in the oven at 375' for about an hour, or until they are tender.




While they are baking, the onions sure make the house smell good:)

The potatoes, are served with butter, sourcream and cheese.

Costco Buys:)

We went to Costco over the weekend and I stocked up on a lot of fun stuff for my kitchen. I got all sorts of fruits of veggies. I can make all sorts of fresh juice:)
Here are some grapes we got:





A bag of onions is under 4.00 dollars there. The potatoes, on the table are from Albertson's. The potatoes I got from Costco, are huge, too big to put in that basket...LOL




Oh, here is a picture of some veggies, I sauteed. Onions, snap peas, celery, all sorts of peppers






This coffee, tastes so good, I love it! That big box was under 5.00 dollars.






Apples, great for snacks, and my juicer:)

You can see the corner of the box of tomatoes, and I also got croissants



Spring mix salad. I mix this lettuce with Romaine:)


We also stocked up on all sorts of meats and cheeses.
Yogurts.

Tonight for dinner we had:

Stuffed Mushrooms
Steak on the Grill
Baked potatoes

Artichokes

Roasted Asparagus
Salad

The kitchen is all clean, the dishwasher is going and I have my coffee pot all set for the morning.

I can't wait for morning, to start the day all over again.

Kevin is sleeping soundly, and his breathing is doing very well right now. Being a mother is hard. The love you have for your children is like nothing else!

Pasta Bake!~~~>again:)

Noodles!


I sauteed Mushroom and Onions.




I layered the noodles, the mushroom and onions, sauce with ground beef and tons of cheese, white and yellow cheeses...

Ta Da...this is what it looks like out of the oven:)








I also served it with fresh green beans, steamed.
A salad and garlic bread:)

This is such a simple dinner to make, and oh sooo good!







I love this steamer, it is one of my favorite appliances in the kitchen. It steams everything perfectly. I especially like how my artichokes come. I cook them upside down. I read that is a better way to cook them.

Monday!

It is a brand new week. I just love Mondays:)

We had a really nice weekend. Little Kevin is doing so much better. Last week I was so scared. I have to find time to write out all that had happened. I thank you all for your prayers. God is so very good. His lungs are looking clear, I just have to be on top of the signs of his asthma now. I have asthma, and was so hoping it would skip my children.

My car was sounding funny on Friday, and then the check engine light came on. My car just seemed to not want to get out of first gear. We took my car to the auto shop, and what happened was my car went into safe mode, so it would not over heat. They fixed my car and now it is running beautifully:)

We did a Costco trip this weekend also, I will share that trip with some pictures:) I had so much fun, buying food for my family and stocking my kitchen. It is a happy kitchen now!

Today, I went to Alexis's school, and she received an award for reading..a GOLD medal. I am very proud of her.

Tony, my oldest is getting better with his attitude. Remember when you were 19? You knew everything! :::whew:::

Tonight, I made onion burgers with melted cheese, baked potatoes and sauteed veggies, with a nice green salad.

I Got This In An Email:) Who is Your Susie?

PANTS


Come with me
to a third grade classroom..... There is a
nine-year-old kid sitting at his desk and all of
a sudden, there is a puddle between his feet and
the front of his pants are wet. He thinks his
heart is going to stop because he cannot
possibly imagine how this has happened. It's
never happened before, and he knows that when
the boys find out he will never hear the end of
it.. When the girls find out, they'll never speak
to him again as long as he
lives.

The boy
believes his heart is going to stop; he puts his
head down and prays this prayer, 'Dear God, this
is an emergency! I need help now! Five minutes
from now I'm dead
meat.'

He looks up
from his prayer and here comes the teacher with
a look in her eyes that says he has been
discovered.

As the
teacher is walking toward him, a class mate
named Susie is carrying a goldfish bowl that is
filled with water. Susie trips in front of the
teacher and inexplicably dumps the bowl of water
in the boy's lap.

The boy
pretends to be angry, but all the while is
saying to himself, 'Thank you, Lord! Thank you,
Lord!'

Now all of a
sudden, instead of being the object of ridicule,
the boy is the object of sympathy. The teacher
rushes him downstairs and gives him gym shorts
to put on while his pants dry out. All the other
children are on their hands and knees cleaning
up around his desk. The sympathy is wonderful.

But as life would have it, the ridicule that
should have been his has been transferred to
someone else -
Susie.


She tries to
help, but they tell her to get out. You've done
enough, you
klutz!'


Finally, at
the end of the day, as they are waiting for the
bus, the boy walks over to Susie and whispers,
'You did that on purpose, didn't you?' Susie
whispers back, 'I wet my pants once
too.'

May God help
us see the opportunities that are always around
us to do
good..

Remember.....Just going to
church doesn't make you a Christian any more
than standing in your garage makes you a
car.


Each and
everyone one of us is going through tough times
right now, but God is getting ready to bless you
in a way that only He can. Keep the
faith.


This prayer
is powerful, and prayer is one of the best gifts
we receive. There is no cost but a lot of
rewards. Let's continue to pray for one
another.



The Prayer:

Father, I ask
You to bless my friends, relatives and those
that I care deeply for, who are reading this
right now Show them a new revelation of Your
love and power. Holy Spirit, I ask You to
minister to their spirit at this very moment.
Where there is pain, give them Your peace and
mercy.. Where there is self-doubt, release a
renewed confidence through Your grace. Where
there is need, I ask you to fulfill their needs.


Bless their homes, families, finances, their

Update!

Hi Everyone. It has been a very busy and upsetting weekend. My little one was admitted into the hospital on Saturday. He had a Viral induced asthma attack. It was very, very scary. We are all home safe and sound. I am just trying to get everything back in order. Kevin is doing well now. He has a nebulizer that I give him every four hours around the clock. I am a bit sleep deprived. I am just so thankful, he is doing so much better. I will be back, and give a more detailed post about it. For now, though, I have a lot to do. I have updated on my facebook too, if you read there.

The Wooden Bowl!



A frail old man went to live with his son, daughter-in-law,and four-year grandson. The old man's hands trembled, his eyesight was blurred, and his step faltered. The family ate together at the table. But the elderly grandfather's shaky hands and failing sight made eating difficult.
Peas rolled off his spoon onto the floor. When he grasped the glass, milk spilled on the tablecloth.
The son and daughter-in-law became irritated with the mess We must do something about Grandfather," said the son.

I've had enough of his spilled milk, noisy eating, and food on the floor. So the husband and wife set a small table in the corner. There, Grandfather ate alone while the rest of the family enjoyed dinner.
Since Grandfather had broken a dish or two, his food was served in a wooden bowl.

When the family glanced in Grandfather's direction, sometimes he had a tear in his eye as he sat alone. Still, the only words the couple had for him were sharp admonitions when he dropped a fork or spilled food. The four-year-old watched it all in silence.

One evening before supper, the father noticed his son playing with wood scraps on the floor. He asked the child sweetly, "What are you making?" Just as sweetly, the boy responded,"Oh, I am making a little bowl for you and Mama to eat your food when I grow up." The four-year-old smiled and went back to work.

The words so struck the parents that they were speechless. Then tears started to stream down their cheeks. Though no word was spoken, both knew what must be done. That evening the husband took Grandfather's hand and gently led him back to the family table. For the remainder of his days he ate every meal with the family. And for some reason, neither husband nor
wife seemed to care any longer when a fork was dropped, milk spilled, or the tablecloth soiled.

Children are remarkably perceptive. Their eyes ever observe, their ears ever listen, and their minds ever process the messages they absorb. If they see us patiently provide a happy home atmosphere for family members, they will imitate that attitude for the rest of their lives. The wise parent realizes that every day the building blocks are being laid for the child's future. Let's be wise builders and role models.

Lord, we ask not that you move the mountains, but that You give us the strength to climb. "Life is about people connecting with people, and making a positive difference"

Take care of yourself, ...and those you love, ...today, and everyday!

Violin Concert!

Alexis had a Violin Concert last night.
I put her hair in a ponytail and put ribbons in her hair.





This is her all ready to go in her new dress.






She played beautifully. The lighting is super bad in the assembly room that she played, with my camera, my camera never gets good pictures, always so dark. A friend took a few pictures at the school, and said she will email them to me. If I get them I will share them:)

Sunflowers and Cows!

I love to collect cows:)..and my favorite flower is the sunflower...so this picture always makes me smile!

I have little collectible cows all around the house.
When I go to buy flowers for my home, I seem to always gravitate to sunflowers, they just seem so happy to me.

..Oh, and another thing, PINK..I love the color pink:) It is such a girl color, and I am 100% girly girl..LOL.

My daughter has a violin concert tonight. I bought her a new dress to wear and I went to Walmart and bought some matching ribbons to put in her hair. I will take pictures when she is all dressed up.

I am thinking of baking chicken for dinner tonight, it is easy and I won't be home at dinner time, I will be at her concert while Kevin stays at home with Little Kevin. I would like us all to go, but I know my son, he would not last sitting at a concert for an hour and half....

It is almost the weekend, YaY!

Jello!




My daughter requested Jello.
So I made some Grape Jello and poured the Jello into these little individual cups I have. These are cups I save from the fruit snacks I buy. I am so glad now, you can buy fruit cups in there own juice instead of heavy syrup. I save the little bowls because they are perfect to put little snacks in them. I also bought some at Walmart that have lids, so I fill some up with things such as goldfish, cereal and so on. They are also nice to put ranch dressing in for my daughter's school lunch so she can dip her veggies:)

The hardest part about Jello, is waiting for it to set...LOL. Every 5 minutes, my kids ask, is it ready yet?

Roasted Asparagus

This is how I made my asparagus last night for dinner.
I broke the tough ends of the stalk off, layered them on a foil lined cookie sheet, a little oil and salt and pepper. Roasted the asparagus in a 425 degree oven for ten minutes.
They are so good, and I did not have any leftovers:)

Artichokes!

I am going to change my menu a little bit today:) Artichokes were on sale at Albertson's this morning, so I am adding that to tonight's dinner:) How do you like your artichokes? Growing up, my grandmother always stuffed them with bread crumbs, garlic, cheese, parsley. I used to dip mine in Mayonnaise, now I just like them plain. My kids like them dipped in butter.

Hopefully I will have my computer back by the weekend, I am so lost without it. It is just not the same with this one downstairs.

This one does have a camera thingy on it, and it makes videos, I will ask my daughter how to work it and maybe I can post a video...LOL.

Not much is going on here, it is cold and rainy so we are staying in except for the grocery store runs I make. So we are playing inside until it warms and dries up outside. Plus I am doing housework; cooking and cleaning and all that fun stuff:)

Hello!

My computer died last night:(

I am using the one downstairs.

It happened late last night, so there was really nothing we could do about it. My husband did look at it and the hard drive seems to be kaput.



The one downstairs is a touchscreen, it is really nice, but it doesn't have any of my favorites or saved places or pictures on here. Until, it can be fixed or replaced, I will be hanging out on this one:)

It is quite chilly today and it is supposed to rain tomorrow.
Baked chicken is on the menu for tonight!

I like to make fresh green salads with my dinners, they include two types of lettuce, cucumbers, tomatoes, celery, radishes, and what ever other veggies I have on hand. I will sprinkle a little cheese on the top of it too. They like either vinegar or Ranch dressing on their salad. I do like to homemake my Ranch dressing. I also found some really good potato salad recipes on the net, so I may include that into one of my meals. This menu is also a rough draft of my menu. It is what I have on hand. I did a major shopping trip on Wednesday, and then my husband and I did another one Saturday, so I really don't foresee having to go shopping for awhile. I may need to go to get more milk, but I am pretty much stocked up. I will keep you posted as to any changes I make through the week with my menu. I also intend to make some fresh dinner rolls, so that will be served with dinners too.

As, for breakfasts this week, homemade juice will be served. I try and make breakfasts different each morning for variety. I have turkey bacon to serve, along with sausage another day. All sorts of fresh fruits. Eggs will be served, scrambled or I also like to make eggs in a basket. Pancakes, french toast and I also have some Lean pockets stuffed with eggs and bacon and sausage. Little Kevin really likes cottage cheese, so he will eat that along with a side of strawberries:) I am going to make granola this week, so if that turns out and the kids like it, they can have that, maybe topped on yogurt.

Friday!


HELLO!




After watching some of Betty's Kitchen YouTube videos on casseroles, I took some of her ideas and made a casserole of my own:) It is a ground beef casserole. It has rice, cream of mushroom and cream of broccoli soup and lot's of cheese:)





It turned out really good. I served it with Corn on the cobb and salad.

We had the casserole on Tuesday, on Wednesday we had Tacos, and last night we had baked chicken. Tonight for dinner, I am going to use up the rest of my chicken and make chicken enchiladas.

I got all the info for my son's graduation, He has to have his picture taken and I have to order(pay) his cap and gown:) This is such an exciting time, and I am so proud of him. Getting his Highschool diploma is a BIG deal!

Grocery Shopping!


Hello!





I did my Grocery shopping yesterday. I needed to stock up on a few things. I clipped my coupons, made my list. I use a clip board and a little coupon holder. I had a coupon for free bakery bread, it had a 4 dollar value, I picked out a loaf of SourDough bread:) My favorite!
I ended up spending 200.00 dollars but in coupons and club card I saved 88 dollars:)
YaY!

Have any of you seen the go squeeze applesauce? Well, my kids love them. I went to buy some on Monday to put in Alexis's lunch and the shelf was cleared out, so when I went back yesterday, the had restocked. Must be popular. They were on sale, so someone must have cleared the shelf. I also had a great coupon for string cheese, and that was cleared empty too, so I went with the other cheese I had a coupon for, not as good, but I was happy!

Betty's Kitchen!

I am not sure if I have mentioned "Betty's Kitchen" on my blog before, but I so enjoy her cooking videos on youtube:) They are southern and simple, just the way my family likes it. Here is a video of a chicken casserole I want to try~~~>




Strawberry Plant!

The little strawberry plant, I planted last year, is getting bigger and it has some strawberries~~I couldn't believe it!

After I took this picture, I have been making sure I water it.
