Saturday Februaury 18th

 This very special day, is my husband's birthday.
We started the day with breakfast at a breakfast buffet and it was cozy.  It was a chilly morning so the coffee was so good.  

We then went and stopped at Ingalls Grocery store for some things my husband wanted to pick up.  We also went to Home Depot where along with what other things my hatband wanted , I also picked up some seeds to plant, yay!!!

He wanted to go see a movie before our birthday dinner, so he picked "A Knock At The Cabin", 
It was a good movie, a rather odd one, it was a psychological thriller..

We then went to his birthday dinner to meat the up with the rst of the family.

We came home had birthday cake and presents.  It was a great day and I was so happy to have another year with my husband.

The night before we went to Ruth's Chris, which was sensational...I will insert a picture here.  They also serve the coffee in a French press, which I love so much.



My husband's Birthday was the 18th, I am a little late with this post.  I wanted this in my blog as a memory so I am posting it better late then never.

Eggplant Parmesan Recipe






Come cook some Eggplant Parmesan with me.
Pick out a beautiful eggplant, and wash it and peel it.
place the sliced eggplant oon a cookie cookie cooling rack and salt the top and bottom of eggplant and let it sweat for about an hour.  Then using a paper towel pat the eggplant to get the sweated moisture and salt off of it.






In two bowls have a mixture of bread crumbs and panko mixed together.  I used Italian bread crumbs about a ratio of a 
⅔ to ⅓ Panko being the lesser.  You can also season your bread crumb mixture.  I used Italian bread crumbs, so they were already seasoned perfectly.


I dipped each slice in egg, then bread crumbs, making sure to really pat the crumbs on it.  Not squish the eggplant put make sure the bread crumbs coated the egg plant nicely and fully.



I then placed them in the airfryer at 390' for 8 minutes, flipping them over half way with tongs




After they were all cooked, I put a dollop of marinara sauce on them with a sprinkle of mozzarella cheese, and popped them in the oven for about 4 minutes at 400' on a sheet pan until the cheese was melted.




viola....they are done, easy peasy and ohhhhh, so yummy!!!

Friday Funday #BEHAPPY




Beef Roast I made Wednesday with the zucchini and feta side dish


My crows that have been hanging around my home for years...they started out as two and now they are four.  My sweet little crow family.  I give them scraps and they appreciat them as they protect my home,


My nails that I got done this week, the color is 139 dip at the salon



My Peloton, oh, how I appreciate her and all she can do for me...she is an all in one cardio machine that has even taught me yoga.  I love her.  I am on year 5 with her.  Yes, my Peloton is a girl.


 Skin care, yes, skincare.  I take seriously, I didn't always but I do now.  I love clean makeup.



These are not my crows, these are buzzards sitting out in my tree in the rain in my yard.  They must see something.  I love this picture, it is beautiful.  I have an affinity for birds. 



My sunglasses...I added this picture, because I just adore how they are stored in this box that sits on my dresser.  Sunglasses are always at hand...now, if the sun would come out...lol

I hope you all have a happy Friday and a wonderful weekend.  I have my laundry going and I already did my workout for the day.  I think I am going to end this post and make myself a cup of coffee....xo

Happy Homemaker Monday

 Hello, and happy Monday everyone.  I am so glad you are here. I am joining in over at Sandra's Blog's, Happy Homemaker Monday.  So fun!!  I enjoy visiting everyone's blogs and making new blogging friends :)




 I had a pretty wonderful weekend.  We had breakfast on Saturday at one of our favorite restaurants, did our Costco shopping, went to the office store and got a new desk.  I tried to get some laundry done in between other homemaking duties.  I went to church on Sunday and then finished the day with going to the big Kroger with my daughter to finish off the grocery shopping and get things I would rather get at a grocery store then Costco. This Kroger is like a supercenter, they have everything there, but on a smaller scale then Costco.

Outside my window, it is wet and dreary and cold, and supposed to rain all week.  I used to love the rain, not so much anymore.  In California, it did not rain that much.  North Georgia, it rains A LOT!!!😉

I am pondering and getting super excited for Spring and planting my garden. I am also planning my quick trip to check on my Dad.  I have to go to California to see him,  I am bringing my daughter with me, she asked to go.  She would love to see her Grandfather.  It is so important.

I am still reading ATOMIC HABITS by James Clear.  It is not a book I will ever give up, but rather keep it and use my highlighter the second go around.  I highly recommend this book

Blog hopping (newly discovered blog).
A new blog that I have found doing this is, Tamy's Blog, Chasing my Life.  I have so much in common with her and she is always so welcoming and kind.  I enjoy her blog so much :)

On my to do list...
I am happy to report I fixed the broken needle on my sewing machine and I am happily able to sew again.  My mother had a talent to sew like no other, while I may not have that talent, everything I sew, I sew with love :)

FORGIVENESS🤍


 Forgiveness.  Let's talk about forgiveness,  We have all had times in our life we make a choice to forgive.  Forgiveness is a very powerful word.  If we use it correctly it can help us heal tremendously.  You can either forgive and let by gones, be by gones.  You can also forgive and move on and not allow to be hurt again.  Sometimes forgiveness is just as important for you as it is for them.  Forgiving is a way to heal our heart.  We can forgive and feed our soul with kindness and gentleness and let go of bitterness.  It also doesn't mean we are allowing to be hurt again.  it is okay to forgive and let go.
Let Go and Let God!
We all have a story, I have a story, in fact I have many stories.  Some of my stories are beautiful and lovely, and some are hurtful.  I talk with God and pray to keep my heart happy and to keep healing from things that have hurt me.  I thank God everyday for blessing me so much more than I deserve.  I do forgive and I do love, but I also know when to let go.  I am telling you my lovely readers, on this lovely Sunday, remember it is okay to forgive and let go.  Also, make sure above all else, you learn to forgive yourself.  You are loved, you are precious and you are enough!!!

Weekend To~Do'S! **NeW**

 


Cabbage Roll Recipe!!


This is my Cabbage Roll Recipe!
It is simple and easy.
Don't be intimidated by the name.
~~~~~~~~~~~~~~~~~~~~~~

For this recipe:

1 ½ LBS of Ground Beef
2 Cups of cooked long grain rice
4 cups of marinara sauce, homemade or bought.
1 garlic clove pressed
¼ Cup of onion
10 - 12 large cabbage leaves, blanched in boiling water until pliable .


Sauté the beef and onions until the beef is cooked through and the onions are translucent and put minced garlic in towards the end of cooking the beef and rice mixture.


Blanche the cabbage leaves in boiling water for about 5 minutes.



Cooking away. drain the beef mixture, return to pan and add a cup of marinara sauce and mix well.




Take the blanched cabbage out and let cool enough to handle.  Once able to handle, put a few spoonful's of the beef mixture into each leaf and roll up like a burrito.  Don't over stuff, you will get it rolled with trial and error.  You can't mess this up.  Before you put each roll in the pan, put a cup of sauce on the bottom of the pan and distribute it evenly on the bottom. then start putting each cabbage roll on the pan, until everything is rolled up neatly.



Pour the remaining sauce over the top of the rolls. Cover with foil and cook in a preheated 375' oven for 30 to 40 minutes.  Take out of oven and let sit for about 5 minutes.  


Remove the foil and plate them
