These potatoes are an absolute favorite in our home.
I have been making these forever.
They are super easy!
Wash your potatoes off ( as many as you want, a potato a person is a good estimate) either with a potato scrubber or your hands.
Poke some holes in them with a fork...you can always google how to poke a potato ;)
Put your potatoes in the oven at 375 for 1 hour
After they finish baking, let them sit for a little while until they cool off enough to handle.
Cut each potato in half and scoop out the potato, careful not to ruin the skin. You are going to place the filling back in the skin. Mash the potatoes in a bowl, either with a fork or a immersion blender....add a few dollops of butter, sour cream, a few splashes of milk, and a good amount of cheese..a big handful...adjust to your liking and how many potatoes are being used.
Mix all together.....make it creamy like mashed potatoes and add back into the skins., sprinkle some more shredded cheese on top..put them in a baking dish and put back in the oven (375) for about 30 minutes.
Serve the twice baked potatoes with a dollop of sour cream on each, a few bacon bits, chopped green onion, salt and pepper and even more cheese ;) Have fun with it and enjoy......
